So easy and tasty! I added black beans and maybe I'll add spinach next time, too.

Jodie's Spinach & Artichoke Cups

Jodie's Spinach & Artichoke Cups

Tasty appetizer and easy to make. They weren't very good at room temperature so I think this is one that should be kept warm throughout the party.

Disappearing Marshmallows

Disappearing Marshmallows

These are delicious! BUT, they have potential to destroy your oven. The marshmallows completely melt inside the pastry envelope and then leak in the muffin tin. Mine actually spilled out of the muffin tin and onto the bottom of the oven. Next time I make them, I'll put them paper liners in the muffin tin as well as making sure there's a pan under the muffin tin to catch any spill-over. They got rave reviews at my party. And they're good served at room temperature so they can be made ahead and left out for grazers.

Butternut Squash Au Gratin

Butternut Squash Au Gratin

Delicious side dish! The sweetness of the butternut squash is complemented by the saltiness of the bacon. It's an excellent option for a potluck. When I served this at a holiday potluck, there wasn't a drop left for me to take home.

Thai Chicken Fried Rice with Baby Bok Choy

Thai Chicken Fried Rice with Baby Bok Choy

This dish was okay; a different flavor for a stir-fry. It turned out way too hot for me (and I normally like spicy). The directions are vague about what to do with the serranos peppers - it says "crush" but that seemed like a strange thing to do with a fresh pepper so I chopped mine up. Maybe you were supposed to crush lightly it and then pull it out after the dish has cooked??

Acorn Squash Ravioli

Acorn Squash Ravioli

Delicious! I absolutely loved these ravioli. The saltiness of the bacon, which I was hesitant about at first, really complemented the sweetness of the butternut squash (I used butternut instead of acorn). Unfortunately, I made a total mess of them. I had trouble when I cooked them in batches and then piled them on top of each other as I cooked the remaining pasta. They all stuck together and I ended up with "ravioli cake"! Before I make them next time, I'll read some tips on how to work with ravioli. Surely I can figure it out.

Grandma's Sloppy Joes

I forgot how much I love sloppy joes! I shared this recipe with my mom who has to make lunch for everyone at her church and the recipe is a hit with her - easy to make for a crowd and it pleases everyone.

Not bad for a veggie smoothie! The ginger gives it a nice twist. This will be a regular juicing recipe for me.

Carribean Banana Salsa

Carribean Banana Salsa

This was different and had a refreshing taste. But, really, if I'm going to serve chips and salsa at a party, I'm probably not going to cut up a banana in it. But it would probably be good served as a garnish with some blackened fish or something like that.

Jamaican Hot Pepper Shrimp

Jamaican Hot Pepper Shrimp

I used a jalapeno pepper since I couldn't find a habanero and this probably influenced the flavors. The shrimp were not hot and I was looking forward to something spicy so I was a bit disappointed. But otherwise, the flavors were decent. If I were to make this again, I'd make it with a good rice and black bean side dish that would really complement the shrimp. Or, this would also make a good party food.

The Best Vanilla Ice Cream Ever -)

The Best Vanilla Ice Cream Ever -)

Decadent! I used Mexican vanilla so it had a nice, strong flavor. Everyone at my party raved about how good ice cream was. I will definitely be adding this to my list of favorites.

Vegetarian Spring Rolls

Vegetarian Spring Rolls

Spring rolls are a great item to keep in the fridge for when you need a snack and this is a good recipe that you can change it up as you like. There's definitely an art to wrapping a spring roll, which I haven't accomplished yet, but next time I do it I'm sure they'll look better! I will be making these again to have around for snacking, for sure.

Chez Pim's Pad Thai

Chez Pim's Pad Thai

As written here, this recipe didn't work out for me. There were ingredients missing from the ingredients list (as noted in another review - I wish I'd read that first) and some of the instructions are incomplete. I recommend you go to Pim's website to get the full instructions. I'll be doing that to see if I get better results the next time I make it.

Attach a Recipe (title)

Hi IvySue, so sorry to miss your comment on my wall about the Lemon Artichoke Chicken! While I submitted the photo for the recipe, it wasn't my original recipe, so I'm frankly not sure what the proper amount of butter is. Did you determine that 1 stick of butter, evenly divided, was the right amount? If so, could you add comments to the recipe page itself? Thanks if so!
