Boneless Pork Loin Roast with Herbed Pepper RubSimple ingredients for a succulent meal. I had to cook this for about 15-20 minutes longer than indicated, and cooked covered with foil, but this turned out so juicy and delicious - everyone kept coming back for more! I served this with mashed potatoes and gravy, fried summer squash and corn on the cob. Yum!

Pizza DoughBecause I'm cooking at a high altitude, it is often difficult to find any type of dough recipe that will work well without having to add/remove things and go through a series of trial and error. So, I was thrilled when this recipe came out perfectly. I used my stand mixer and let it rise for one hour. I rolled it out and left it or another 20 minutes. Then, I added my toppings while the oven was preheating. I topped this with 1/3 cup tomato and basil spaghetti sauce (yep), 8oz. Of mozzarella cheese and pepperoni. Everyone asked for seconds and thirds. The only thing I'd mention is that this recipe says this makes enough for two pizza's. I disagree. It is only enough for one large pizza, so if you're feeding a crowd - double up!

Grandma's WafflesI didn't follow this recipe exactly, as I used Soy Milk instead of cow's milk or buttermilk and I used Extra Virgin Olive Oil instead of vegetable oil. This recipe is a great, basic and easy to make recipe and I make it often. I play with it every now and then. The last batch I made, I added two tablespoons of pure honey. Yum! I usually make a double batch of these and freeze them; the kids love them for breakfast. They're delicious and easy to make!

Creamy Chicken EnchiladasQuick and easy is not always a good thing. I made this last night and nobody wanted to eat it! I should have known better when I saw Cream of Chicken soup listed in the ingredients. This was so runny and terribly bland. The texture and taste were horrific and I was sad that food was wasted as we ended up tossing it all. I wouldn't mind giving this another try - the concept at least - but I'll never make anything with creamed soup again, yuck!

Chicken and WafflesI don't know what I was expecting but this wasn't it. My family and I ate it, but I can't say that we particularly enjoyed it. I'm huge on flavor, and this had very little. While it was not terrible, it was nothing exciting, either. I will try this again, but I'll be adding my own flavor to give it some life.

Sausage Gravy (for Biscuits and Gravy)This was quick and easy and tasted great, though I didn't follow the recipe exactly. I couldn't find sage flavored sausage, so I used plain and seasoned it with sage myself. I also never buy (cow) milk, so I used organic Soy milk instead and it worked out just fine. My husband and kids really enjoyed this meal - and they are picky eaters! This isn't full of flavor, but it's a great comforting home style meal for busy people or anyone on a budget.

Tamales - Better HomesThis recipe was good and easy to follow; thought it seemed like there was too much filling and not enough meat and sauce, so I had a lot of left over filling that I didn't know what to do with! The taste was very good, however, and everyone I served this too seemed to enjoy it.

Chicken PosoleI recommend doubling, maybe even tripling this if you want to feed a crowd. I made this, along with homemade tortillas, tamales, chips and guacamole for Mother's Day. EVERYONE came back for seconds on this! It was delicious and everyone love it, even the kids!

Chicken Milanese - Breaded Chicken CutletsI was impressed by the fact that these are actually a cinch to make! We have a total of six people in our house and I'm always on the lookout for recipes that I hope will please everyone - this recipe met that expectation and everyone loved it. Yummy and easy to make!

Chicken Flautas From Serrano's CafeVery easy to make and a big hit in my house. I've made this several times and my kids always get excited when they see me cooking these - they're definitely a favorite around here.

Buffalo Chicken Cheese BallsThis was pretty quick and easy to make. My kids loved them but my husband and I weren't fans of the interior texture. This is something I'd make again for an easy lunch for the kids but I think I'll use less cream cheese and more seasoning next time.
