Homemade Baked Macaroni and Cheese

Homemade Baked Macaroni and Cheese

This was fantastic! I added about 8 oz shredded Swiss cheese to the cheese mix, and topped it with crumbled low salt Ritz crackers and fresh bacon bits. Used it as a side to meatloaf that night. Loved it, will do it again for sure.

Raspberry Cobbler

Raspberry Cobbler

This was super quick and easy. My only complaint is that the batter turned out a bit too brown for my liking, not burnt but almost. Next time I'll take it out around 45 minutes.

I liked this but the rest of my family was on the fence. Maybe we'll do this again in the future.

Scalloped Corn

Scalloped Corn

Eh. We aren't big scalloped corn eaters so I have nothing to compare this to. This won't be a regular addition to our menu.

Dublin Coddle - Irish Sausage, Bacon, Onion and Potato Hotpot

Dublin Coddle - Irish Sausage, Bacon, Onion and Potato Hotpot

This was good. I had to add liquid a few extra times more than the recipe states, but that may have been due to an ill-fitting lid. I did not have a lot of time to cook this so I turned the heat up to 375 and cooked for about 2 hours. As a result of the liquids drying out the potatoes and sausage developed a bit of a char, but it actually added flavor, so I didn't mind. I will probably make this again in the future, but it won't be a regular meal.

Irish Rovers Unicorn Pub Shepherds Pie

Irish Rovers Unicorn Pub Shepherds Pie

I made a few adjustments since I did not have some things on hand. I used garlic powder to taste, and cut the recipe in half to feed a smaller family. Overall this was better than my previous shepherd's pie recipe because of the gravy that held it all together. Also the melted butter (and a 1/4 cup of milk) in the mashed potatoes made them so light and fluffy. They were perfect. I will definitely be using this version from now on.
