Cajun Chicken PastaI cooked this a couple of nights ago. I could night find Cajun seasons at the store so used creole seasonings. My husband thought after a few bites that I would find it to spicy for my taste but I loved it very much. This is definitely a meal I will fix again and again. We ate all of it that night.

Mushrooms Sauteed with Garlic ButterI like to fix these on steak night. On steak night I serve beef flavored rice-a-roni. These mushrooms can be eaten along with the steak or I add it to the rice-a-roni as I cook it. Very yummy either way

Gravy TipsI use a roux to make my milk gravy but for turkey gravy or roast gravy, I prefer cornstarch.

Mexican Cornbread CasseroleThis is a new family favorite. Instead of using boxed cornbread mix, I make my own cornbread and follow the rest of the instructions. We like to top it, when serving it, with sour cream, salsa, and black olives.
