Banana Bread

Banana Bread

Quite yummy! I added some cinnamon to the batter, threw in some chopped pecans and walnuts, and sprinkled a little sugar on top of the batter prior to baking.

Pumpkin Loaf/Cupcakes with Cream Cheese Icing

Pumpkin Loaf/Cupcakes with Cream Cheese Icing

I used a bundt pan and baked for about 55 minutes. The frosting was a little thinner than I'd hoped...I may even make it thinner next time to use it as more of a drizzle. I liked the idea of substituting applesauce in lieu of the oil. Great recipe!

Garlic - Parmesan Crusted Pork Chops

Garlic - Parmesan Crusted Pork Chops

I didn't have any dry bread crumbs so I substituted panko crumbs instead and the flavor was great! I sautéed the chops in olive oil until they were almost done, then I finished by baking them in the oven for 20 minutes.

Homestyle Meatloaf

Homestyle Meatloaf

I'd been craving comfort food and this fit the bill! Had to use shallots instead of onion because I'd run out but the flavor was wonderful! I'll be trying this again, maybe with brown gravy instead of the glaze sometime.

Old-Fashioned Soft Pumpkin Cookies

Old-Fashioned Soft Pumpkin Cookies

Made these for a fall barbecue & they were a hit! I used an entire can of pumpkin (about an extra 1/3 cup more) so I didn't waste the can and then added a little cinnamon to the glaze for a little more spice. I was asked to share the recipe!

Creamy Chicken Enchiladas

Creamy Chicken Enchiladas

I added garlic powder, onion powder, Mrs. Dash's Fiesta Lime seasoning, cumin, and black pepper to the chicken mixture, as well as throwing in an extra can of green chiles. I also poured a large can of prepared enchilada sauce on top of the rolled tortillas before sprinkling on the remaining shredded cheese. These are my go-to chicken enchiladas!

90-Minute Cinnamon Buns

90-Minute Cinnamon Buns

Very easy & delicious. I baked them in a 13x9 pan for about 25 minutes then added an easy frosting (6 tablespoons powdered sugar mixed with a teaspoon of vanilla and enough heavy cream to make a drizzle).

Hummus

Hummus

Great base recipe! I used 8 cloves of garlic and used peanut butter instead of tahini (I don't like the flavor), then added about a tablespoon of sesame oil. I also added a little onion powder, cracked black pepper, and extra cumin. Inplan on adding chipotle peppers in the future for an added kick.

Olive Garden Style Zuppa Toscana Wedding Soup

Olive Garden Style Zuppa Toscana Wedding Soup

I made enough to share and needless to say, it was a hit! I only useful about 120 ounces of reduced sodium chicken broth and half of a large onion...but I added fresh cracked black pepper while the onion & garlic sautéed and then added some white pepper, garlic salt, and a bit of onion powder once it was added to the broth. I also thrw in another 1/4 cup of cream.

Sweetheart Salad

Sweetheart Salad

My mom makes this every year for Thanksgiving and for special occasions...it's always requested and the kids (from 19-30) always fight over who gets the lasy spoonful :)

Chicken Enchiladas

Chicken Enchiladas

Delicious and EASY!!! I made a few modifications to the recipe to suit my cooking tastes. I completely omitted the beans inside the enchiladas, used fresh boiled/seasoned chicken instead of canned, and opted for corn tortillas instead of flour (flour sometimes gets soggy in these recipes. I also threw in some green chiles, garlic salt, and Mrs. Dash's Fiesta Lime blend to the chicken mixture for some extra flavor. To save on some fat and calories, I also chose to use reduced fat sour cream, cream of chicken soup, and cheese. All in all, this was a very flavorful, easy, and delicious recipe. My boyfriend and I usually discuss new recipes and decide what we would change the next time we make it...and neither of us could think of a thing!

Chicken with Creamy Dijon Sauce

Chicken with Creamy Dijon Sauce

Perhaps it was user error but my sauce was quite thin. Think I'll add a bit of corn starch or flour next time. Used 1 1/2 tablespoons of shallots and 1 1/2 of slivered fresh garlic, as well as adding more Dijon. Very yummy dish!

Snickerdoodles

My cookies were a little on the small side but they were chewy and soft. Perfect amount of sweetness.

Proscuitto Pork Cutlets with Garlic Sage Lemon Sauce

Proscuitto Pork Cutlets with Garlic Sage Lemon Sauce

What else can I say but PHENONEMAL!!! I try to use 5-star rating sparingly but this one is worth it!! Had to use rosemary in place of sage but the flavors worked together perfectly. I plan to use this with chicken, too! The leftover sauce makes a delicious pasta topper.

BEST soft herb rolls for busy cooks!

BEST soft herb rolls for busy cooks!

Made these to go along with lasagna when we had company over & they were a hit! I added a little oregano to compliment the meal, as well as sprinkling some parsley on top with the salt. I wish these rolls were a bit more airy but they were still yummy!

Boston Cream Pie

Boston Cream Pie

It was okay. The cake was a little dry and the filling wasn't as moist as I'd hoped. I probably will try again, but with some changes.
