What's for dinner?
I am a retired elementary school teacher who is lovin life.I like to read, swim, travel to new and familiar places and of course I enjoy cooking for an appreciative audience!

Mmmmm, it's hard to pin me down to a favorite food. I really just love most foods, but I do crave sweets and there is nothing like that first bite of a perfectly made fruit galette still warm from the oven..( of course, somebody else has to make it!) As far as foods I like to make the most, maybe that would be anything I know the people I cook for will enjoy, like chocolate cookies for my grown up son, mashed potatoes au gratin for my sister and halibut with pesto butter for the man in my life.

Best Ever Meat LoafI admit i did not get to taste this meatloaf, but made it for a family with older children whose mom was ill and it received rave reviews..they requested it again for the next time i cook for them.

Seared Scallops with Tropical Fruit SalsaLoved it and so did my guests! Made the salsa a day ahead wIth no problem....easy too...a keeper.

US Navy Bean SoupThis was delicious! I was worried the entire time it was cooking that it was too watery and oniony, but in the end...wonderful! I did add 1 extra cup of potatoes and some lemon pepper. I could eat it every night!

Best Ever Blueberry Coffee CakeLoved this recipe..the company devoured it! It baked in 50 minutes and would be so good with whipped cream or ice cream, or, of course, coffee.

Baked Zucchini with TomatoesThis dish was easy, summery and delicious! I omitted the pepper as i didn't have one and sprinkled it with grated cheese during the last few minutes of cooking, just to add some punch. Yum!

Lemon-garlic Shrimp SkewersThis is the very first recipe I have tried on Big Oven and my very first review. It was terrific! We made it as a main course and it was a big hit..easy and delicious...I plan on making it as an appetizer this Friday night for company. The gas grill worked great. I did chop the garlic quite fine.
