Couscous/mushroom/chickpea CasseroleI have made this one a few times. It's a little tough to strike the balance and allow the liquid to absorb properly but that's the chef's fault not the recipe. It's hearty and delish!

Butter Chicken (Indian Dish)It didn't taste great. Not enough flavour. I thought the spices would make the tomato base taste a little less like tomatoes from a can but alas, it was not very good.

Navajo StewI made this almost exact except I could not find chipotles so I used fresh jalepenos. It was AWESOME! I served with a dallop of yogurt. REALLY filling, hearty and yes, delicious. Took an hour to make from start to finish but may take longer if you don't have a helper.
