Chicken-and-Black Bean Enchiladas

Chicken-and-Black Bean Enchiladas

Pretty good. If you don't like spicey, watch the rotel you use...there's a milder version. Also, we used herbed chicken which added more flavor to the chicken...yummy! Definite hit at our house!

Cinnamon Walnut Baked Apples

Cinnamon Walnut Baked Apples

This is a really great recipe to use up those apples, especially if you have an apple lover in your house who doesn't eat all his apples (figure that one out). I used craisins in with the walnut mixture and it was really good.

Grandma's Split Pea Soup

Grandma's Split Pea Soup

I made this with bacon as we didn't have smoked turkey leg or a ham hock. It was really really good. Careful on the sage though...I used a little too much.

Pumpkin Spice Cake with Honey Frosting

This is one of my new favorite fall treats. I made it several times over the winter and everyone L-O-V-E-D it. I just used plain cream cheese frosting too...yum!
