Slow Cooker Pork and Beans

Slow Cooker Pork and Beans

I cooked for a longer time since I didn't soak my pink beans, like I normally would. I added oregano towards the end, and needed to add more water then, for consistency I like (and because I didn't pre-soak). It was delicious and so easy! I shredded the cooked pork and just mixed it all together like a stew and served over brown rice.

Baked Southwestern Egg Rolls

Baked Southwestern Egg Rolls

I was really hoping to love these like Chili's egg rolls. I even added about 1 chicken breast, cooked and diced very tiny. These didn't have the flavor I was looking for and the spinach was a little over-powering. I did get some compliments, but it wasn't the flavor I was hoping for.

Mini Crescent Smokies

Mini Crescent Smokies

Delicious! Of course, I didn't use fat-free cheese. Simple to make--just watch the baking time and/or temp.

Nacho Cheese Potato Slices

Nacho Cheese Potato Slices

I think these should just be called 'Barbecue Potatoes'. They were EXACTLY what I was looking for! The only changes I made were sprinkling salt over the potatoes once on the pammed, foil-lined, baking sheet (very important). And I tented a panned piece of foul over the top while Baku g, so it didn't dry out. After the first 45 min, I had to bake about 25 min and then added the cheese. It was delicious!

New Bedford Portuguese Kale Soup

New Bedford Portuguese Kale Soup

This soup was great! It's the first time I've ever cooked with kale, although I've tried it in other soups at restaurants. I added the garlic powder and paprika when I put the potatoes in (I didn't see it listed as to when to add).

Pinto Beans And Ham

Pinto Beans And Ham

Great flavor and I ate this as a main dish. I used about 3/4 lb of ham and cooked this 12 hours on HIGH, as I like my beans very soft and creamy.

Good n' Chewy Chocolate Chip Cookies

Good n' Chewy Chocolate Chip Cookies

These are great! I only used 1.5 cups chocolate chips and it was more than enough. Also, this is my first time making cookies from scratch and the recipe was written beautifully. Can't wait to try mixing chocolate and peanut butter chips together!

Potato, Spinach and Artichoke Soup

Potato, Spinach and Artichoke Soup

I used 1 can of the drained artichokes and 1/2 of all the cheeses. I added some cooked, shredded chicken when I put the veggies in. This soup was wonderful, and satisfied everyone! I will definitely make it again!

Saucy Beef Noodle Skillet

Saucy Beef Noodle Skillet

I sauteed peppers in butter before adding to mix also chose to use beef flavoring packet with the noodles. Next time I'll do the same but maybe only use 1/3 cup Italian dressing. Pretty good and super-easy!

Tex-mex Chicken Spaghetti Casserole

Tex-mex Chicken Spaghetti Casserole

Delicious!! I used enchilada sauce instead of tomato sauce. Also, I used 8 oz of 2% milk velveeta instead of 16 oz of Mexican velveeta. At end of baking time, I sprinkled shredded fiesta cheese (4 cheese Mexican blend) on top.

New New Orleans Pasta

New New Orleans Pasta

The dish has a nice flavor to it. It calls for a lot of meat, so I increased ALL ingredients EXCEPT the meat to make the meal go further. Instead of cream I used half-and-half to cut fat and had to at least double it to get enough sauce. I loved the flavor of the chorizo in here.

Chicken Enchiladas with a twist

Chicken Enchiladas with a twist

Good and really simple. Added a little more chicken and used only 1/2 cup of broth and it was plenty. I added cilantro, cumin, black pepper, and Mrs. Dash Southwest Chipotle seasoning to chicken mix. Used 4 each of corn and flour tortillas. Also some green onions over top before baking.

Spinach and Orzo Pie

Spinach and Orzo Pie

I misread the directions and ended up blending the eggs with the ricotta mixture on accident. So, I decided to mix the entire ricotta/spinach mixture with the orzo mixture. I topped with the with spaghetti sauce and baked as normal, but put it in a 2-qt glass dish. It was delicious! Oh, I also substituted the nutmeg with 1/2 the amount of ginger since I was out.
