What's for dinner?

I love living in East Tennessee.  We call it, "God's Country" and are blessed to have 4 distinct seasons.  My favorite jobs are that of wife and mother to my wonderful husband and beautiful daughters.  Secondly, I am a registered nurse.  My most rewarding aspect of that job is teaching patients how to care for themselves after they go home from the hospital.  I've loved to cook for as long as I can remember.  My favorite foods to prepare are soups and cookies, with muffins as a close 3rd.  I try to prepare meals that are colorful, nutritious and delicious.  I wanted to be gifted in the area of music, but because I cannot carry a tune in a bucket, even with a padded handle, I can use my gifts that come out of the kitchen to bless others when they have a new baby, an illness, or simply move into our neighborhood.  Nothing says, "You are loved" more than a plate of my fresh baked gingersnaps!


I've always loved vegetables... and dark chocolate... in that order.  I was the kid that would come home from school and cook a box (yes, that was back when veggies came frozen in boxes) of broccoli and eat it for a snack.  And I don't think I'll ever have too much money, too many friends, or too much dark chocolate in my diet.

I remember once when my parents celebrated their 25th wedding anniversary.  I was 18 and I threw them a surprise dinner party.  I prepared all of the food myself and served it, using my mother's best china and crystal.  It was a beautiful evening and I am so glad it turned out well... for my parent's sake.

Other sweet memories from my childhood include learning how to cook at the hands of my mother, and both of my grandmothers.  I started helping out in the kitchen when I was about 5 years old and because I was the oldest grandchild and only had a brother and a slew of boy cousins, I was always in the kitchen with the older ladies when our family got together for holidays.  They are responsible for many of the successful dishes I prepare today.  I am enjoying helping my own daughters learn to cook foods they liked to eat when they were growing up.  Passing the love forward!
