Creamy Cajun Chicken Pasta

This was a fantastic recipe. I just tweaked it a bit b/c of what I had on hand. I used bow tie pasta instead of linguine. I made the cajun seasoning myself with a recipe I found on this site. I used fresh garlic in addition to a bit of garlic powder. I also had fresh basil on hand so I chopped some up and added it to the chicken and sauce right before pouring it over the pasta. I did not have green onion so I substituted with a bit of red onion and a shallot. I doubled the sauce and used three diced chicken breasts. I noticed that the sauce was very thin so I added 2 teaspoons of tomato paste to thicken it up a bit. Will definitely be making this again!

I made this for dinner last night and it was a pretty good recipe, but I would change a few things. First of all, I didn't have agave nectar so I used brown sugar instead. Next time, I will also add honey to the mix. I found the taste of balsamic vinaigrette to be a tad overpowering. I may add a little less next time, or perhaps adding honey will help with it. After I simmered for 20 minutes, I let it boil uncovered like the recipe says but I found that the sauce did not thicken until I finally gave up on the boiling and reduced it to a low simmer. After I did this, it was ready in minutes, but still not as thick a sauce as I had been expecting. The sriracha hot sauce really makes this dish. Overall a good recipe and I will probably make this again with my changes. I may even add some red pepper and see how that goes.

Hasselback Potatoes

Hasselback Potatoes

These were very good, but perhaps I used the wrong kind of potato? I used a Yukon Gold and it took FOREVER to cook in the oven. I thought cutting it so would shorten the cooking time, but I was wrong. I ended up giving up after an hour and 45 minutes and just serving them as is. It turned out that part of the potato was way undercooked, part was cooked just right, but the tops were almost burnt to a crisp. I will try again and hopefully get different results. Looked beautiful on the plate.

Finger Lickin Good Pork Chops

Made this last night and I was a bit disappointed. The sauce was pretty bland for our tastes. I thought this might be case when I was preparing it, but decided to go by the exact recipe. Next time, I will definitely add some fresh garlic and ground pepper to the soup mixture. I will also add all of the spices that I added to the flour mix to the soup mix as well. I will only add a LITTLE bit of the leftover flour mixture next time. Adding the whole thing was way too much and the taste of flour overpowered the dish.

Bourbon Chicken

I made this for dinner tonight and it was delicious. I added maple syrup and doubled the sauce. I didn't have cider vinegar so I used balsamic instead. I also added the sriracha sauce as we love our food spicy. I served it with white steamed rice and a side of soya beans. Definitely adding this to my favourites.

Herb Roasted Rack of Lamb

Made this for my hubby last night. First time ever cooking lamb and it was a hit! I didn't realize that I had run out of bread crumbs until the last minute so I crushed vegetable crackers in my food processor instead. It turned out fantastic and I will use these again instead of regular bread crumbs!
