carrot cake with cream cheese frostingLove this recipe! A little too much oil but that's easily adjusted... I added margarine and brown sugar to my jumbo cupcake pan like you would for pineapple upside down cake) and they turned out delicious! Perfect little single serve desserts. Yummy.

Three Milk Cake - Pastel De Tres LechesI'll use a little less syrup next time since it was a little TOO moist. But other than that, it was delicious. I added mashed bananas to the batter, that's how the birthday boy requested it, and it was delicious! Will be making again soon

Pineapple Upside-Down CakeI made this recipe into cupcakes for mother's day for the mothers at my church. They were a huge hit! I used less sugar since I wanted a nice yellow pineapple, and, of course, added cherries. Loved it!

Easy Roast Lemon Pepper Chicken & PotatoesExcellent! I coated the chicken with the spices plus a bit of salt about 4 hours before roasting. It made the chicken more flavorful. Also added minced garlic to the potatoes. It was quick and delicious! Thanks for posting!
