Turkey Risotto PrimaveraThis was great! I did vary the recipe a little bit, using up items I already had in stock. I started with leftover turkey, both dark and white meat which I cut into chunks and browned up a bit in the stock pot I was planning on making the risotto in. Also instead of straight arborio rice, I used a package of Lundberg Family Risotto I had on hand (even though the box called for 2 cups of water, I used 3 cups of turkey broth from the roasted bird - as suggested in this recipe.). For the veggies, I used a standard 16oz package of frozen "California mix" (containing broccoli, cauliflower, and carrots), and for the onions, frozen chopped onions; all of which I thawed under cool water in the sink, onions seperately. The frozen veggies worked out quite well. I did take the time to julienne the carrots and trim the tough pieces off the broccoli stems and then briefly sauted the veggies in a separate pan with a tsp of EVOO and minced garlic. Gnocchi with Mushroom SauceI made this recipe about 2 weeks ago and I'm ready to make it again! My kids loved it, even though they say they won't eat tomatoes, they said they'd eat this again! This is a great quick and easy recipe and meat, fish or meat alternative could easily be added.

Cauliflower Au GratinIt's a bit of a production and higher in calories than I'd like for a frequent use side dish, but it was very tasty. I was very pleased about how easy it was to make the bechamel sauce (my first attempt). Now, my quest to figure out how to make a low fat version!
