These were very easy to make and took about an hour to prepare. They were a little dry without the relish, better the next day. I'd recommend making up the cakes mixture and resting it overnight. We added the ranch dressing on the side for dipping. Liked well enough I'll try them again.

This was very popular! I used 3/4 cup of milk in making the cream of mushroom soup - it's a bit thicker. Could be a bit spicier and could use more enchilada sauce.

Crispy Baked Egg Rolls

A lot of prep work - chop chop chop! But worth the effort. I made the full 24 count the recipe called for an froze about 9 of them, we'll see how well they freeze. The wrappers came out nice and crispy - I think coating them with warmed sesame oil was the key there. I can see adding bits of pork or shrimp would add to them for those who are not vegetarians. Just need s a sweet and sour sauce for them for dipping!

Bourbon Chicken

Easy to make and easy to eat! Nice spiciness from the red pepper flakes balanced against the brown sugar. Used it as the main dish with asian broccoli (modified by adding snow peas) and egg rolls.
