Cheesy Onion Roll-UpsThese are very easy to make... and very popular in my house! I make them regularly as canapes for parties and "big games!" My wife just like having them around as a snack!

Black Bean Corn Cakes With Cucumber RelishThese were very easy to make and took about an hour to prepare. They were a little dry without the relish, better the next day. I'd recommend making up the cakes mixture and resting it overnight. We added the ranch dressing on the side for dipping. Liked well enough I'll try them again.

Green Beans with Walnuts and Walnut OilThis is an excellent green bean recipe. The walnuts add a great flavor to the beans plus a pleasant soft crunch. Very popular at my table.

Chicken Enchiladas with a twistThis was very popular! I used 3/4 cup of milk in making the cream of mushroom soup - it's a bit thicker. Could be a bit spicier and could use more enchilada sauce.

HummusThis was excellent. Could have used a bit more olive oil to make it a bit creamier. The mint was a nice touch.

Cranberry Walnut Chicken SaladThis chicken salad was outstanding. The walnuts were nice, the chicken was perfect. Makes a lot though. You can probably cut this in half and be just fine.

Horse Radish SauceCould use a bit more horseradish as the sauce is somewhat on the mild side.

Crispy Baked Egg RollsA lot of prep work - chop chop chop! But worth the effort. I made the full 24 count the recipe called for an froze about 9 of them, we'll see how well they freeze. The wrappers came out nice and crispy - I think coating them with warmed sesame oil was the key there. I can see adding bits of pork or shrimp would add to them for those who are not vegetarians. Just need s a sweet and sour sauce for them for dipping!

Bourbon ChickenEasy to make and easy to eat! Nice spiciness from the red pepper flakes balanced against the brown sugar. Used it as the main dish with asian broccoli (modified by adding snow peas) and egg rolls.
