Couscous with sweet potato and zucchiniI liked this a lot! I wish I had followed the instructions and removed everything before I put the zucchini in! I ended up with glop...delicious glop, but mine didn't look anything close to the picture. I'm going to make it again and follow the instructions more carefully next time. It was soooo good! Thank you!!!

Quesadillas CasseroleI made this in a square casserole dish because I was worried about the height of the quesadilla tower! It probably would have looked better in a cake pan, but because I doubled the recipe I wanted to make sure I had enough room. I layered it up, added black beans and served it with some spanish rice! It was hit with the whole family! In the future I'll make two cake pan sized casseroles and put one in the freezer for later. Thanks for an excellent meatless main!

Quinoa, Broccoli, & Cheese CasseroleThis was a great addition to my "Meatless Monday" endeavors! My hubby AND my 2 yr. old liked it. I loved it! It has made the rotation! I added about 3 cups of broccoli to it, but other than that I really didn't change a thing about the recipe. I served it with fruit and the whole meal was a hit. THANK YOU for sharing!!!

Caramelized Onion and Lentil SoupI too used dry lentils because that's what I had, doubled the onion and oil and upped the amount of chicken stock for the dry beans. I added carrot, tomato, and some shredded chicken, but essentially it's the same base recipe! :D Delicious!

Chicken and Rice CasseroleI thought it was awesome! I've noticed can sizes have gotten smaller, so I added a little bit of whole milk to my "healthy" soups (!) for "more" and so it would spread better. I also used a mix of frozen and fresh broccoli that I microwaved together to get them thawed/steamed. And the last 5 minutes or so I bumped the oven temp up to 400 and that worked for my oven to get the top nice and brown and bubbly, so it was in the oven for a total of about 30 minutes, which I felt was very reasonable! It was a hit with my toddler AND husband (and me!). Thank you!!!

Chicken Pot Pie CasseroleThanks QUILLDRAGON! I actually make it with the condensed 10.5 oz cans because that's what I usually have on hand. That part of the recipe I had not updated from my Aunt's recipe. I adjust the amount of chicken broth I use to thin it out, generally I use 1/4th of a cup, but depending on what veg I have on hand or what else I decide to throw in there, the amount could vary. Of course, when making the recipe it can always be changed to taste! Thanks so much again for pointing that out, and I've updated the recipe!

Cheeseburger StewThis was pretty easy to make, with a few changes it could be more healthy, like swapping fat-free evaporated milk for the regular milk, and using light velveeta, and vegetable broth instead of beef (I'd probably add low-sodium worcestershire to it if I did that though). Also, this could feed a lot of people, a little fills you up pretty quickly due to the potatoes. It's a great winter time meal, that even my hubby likes.
