What's for dinner?
Grilled Greek Chicken
 I have two passions in life - horses and FOOD! I love to cook (actually, I love to eat!) and when I am not at the farm riding, I can be found in my kitchen. My friends all tell me I should go into catering. In 2008, I catered an engagement party for 60 people in my backyard. It was hard work but oh so much fun! I LOVE my WOLF duel fuel range and it makes cooking fun! My husband (Flareless) loves cooking  with me and some of the best times we have are spent in the kitchen. :o)

I love all food but especially pasta and seafood and anything made with a hollandaise or bearnaise sauce. I think one of my most memorable cooking experiences was one year when my son brought his girlfriend over for Thanksgiving dinner. Everything was beautiful - table setting, food - everything! I had cooked an 18 pound turkey to golden perfection. The turkey was resting on the platter under foil and it was finally time to carve it. I picked up the platter but it was too heavy and the platter tilted EVER so slightly and WHOOSH! The turkey slid off of the platter and landed on the floor! My son (ever the helper) doubled up on the floor, laughing hysterically while his girlfriend's eyes widened in absolute horror. She started shouting "Do something!" to my son, who was absolutely paralyzed by fits of laughter, tears streaming down his face. My brilliant husband tried to pick it up ("OW, HOT!") and dropped it on his foot. The dog of course, was in like a shot, helping to clean up the mess. My husband finally got the turkey back on the platter and quietly left the room. He came back 5 minutes later and said, "get in the car, we have reservations in 20 minutes". The girlfriend's comment???? "In my house there would have been a murder" LOL! Yes, this was a very memorable Thanksgiving! ;o) Oh well, nobody's perfect!

This was simple and delicious. Wonderful combo! I served it with a spinach salad with dried cranberries, blueberries, chopped apple and toasted pecan salad. I made a vinaigrette from apple cider vinegar and apple cider with olive oil. It was the perfect accompaniment. I would definitely make this dish again!
