Yum!!!! Another excellent low carb dinner choice!! I love how this recipe isn't as oily as the restaurant version usually is. I added a lot more tofu than called for, so I could have some leftover for lunch the next day. Great recipe!!
Great veggie main dish! Tofu and quinoa give it substance. I added mushrooms and cauliflower in addition to the broccoli. When making it next time might want to spice it up and give it some kick! Awesome meatless casserole!!
I can't say enough good things about this recipe!! Total hit at dinner. Two things that I did that may have made a difference: I marinated the beef overnight, and I use top sirloin steak. Whether those attributed to why this recipe tasted so darn good, I don't know... But frankly, I don't care! If the hubby likes it and it's healthy, I'm happy :)
So quick and easy to make on a rushed weekday night when you don't have the time to spend 1.5 hours on making dinner!! Baking it inside the enclosed foil ensures that the chicken comes out super moist. I feel like you can almost throw anything in there and it would turn out yummy. :) I didn't have stuffing the recipe called for ao I substituted Italian syle Panko instead and it turned out great!
