Baked Potato SoupI used leftover already cooked potatoes when I made this. I just heated them through in the water and followed the recipe as normal. This is tweaked to my taste - I added more salt, celery salt, reduced the thyme, changed rosemary to oregano and added cheese and bacon bits. [I posted this recipe.]

3 Envelope RoastThis roast was great! The flavor was wonderful and the gravy was super yummy. I browned the meat and cooked the roast in the crock pot (using the full packet of each). At the end I thickened the gravy with flour and left it in the crock pot for another 1/2 hour.

Apple Cinnamon MuffinsOriginal recipe called for regular applesauce + 3 tsp cinnamon, 1 tsp ground cloves, & 2 tsp allspice (we don't care for that much spice). [I posted this recipe.]

Homestyle MeatloafThis meatloaf was DELICIOUS!!! I always try new meatloaf recipes (because I have never found one my family likes) but my husband, myself & my kids (I have 4 sons ages 8 and under) really liked this meatloaf - my 8 year old had 3 helpings!! I may shred some carrots and add next time (just to sneak in some extra veggies).

Cucumber-Onion BakeIt was a strange combination so I wanted to try it. The taste was good but overly ketchup-y in my opinion. The presentation was not good - the flour got lumpy and it was very mushy. My husband thought it tasted like onion rings dipped in ketchup. It might be good chilled and used as a topping on cheese burgers.

Cheesy Cornbread05/2007: This was just ok - I did not add the corn. The taste was good but the corn bread was tough.
