What's for dinner?
I enjoy brewing beer, grilling all year round, hiking, and family time around the table.

I love making homemade pizzas (long story) and pastas. I want to expand my family's limited dinner time menu. I am looking for healthy quick (60 min at the very most) that don't come from a box.

Fresh Egg Pasta Dough

I followed the instructions and this was the best pasta I have rolled out to date. I recently started making my own pasta. This pasta recipe is easy (most are), but the tip of adding one tablespoon of water at a time is why I'm posting. I, in my very brief time of pasta making, have never came across this instruction. Some recipes of water on them and then have you kneed in more flour to get the right dough consistency. Thank you for this tip.

Great Italian Meatballs

Great Italian Meatballs

I tried these tonight. I used a digital scale to make 1 oz meatballs the recipe yielded about 40 - 44. There was some left over I couldn't fit all of them in the pans I had. My family and I liked the overall flavor, the only change I would make would be to reduce the amount of black pepper. After about the third meatball you could really feel and taste it. Thank you for this recipe I will use it again.

Bourbon Chicken

Bourbon Chicken

I made this tonight for my family, it was very good. My kids said it was a definite repeat. I made double the amount of sauce, we are a saucy bunch and there was a lot of sauce left over. I love spicy food but my kids and wife are tenderfoots so I used half the crushed red pepper. I served it on top of a bed of Quinoa (keen wa). The next time I make this I will stir fry some veggies and toss them in at the end and garnish with green onion. Thank you for this recipe.
