What's for dinner?
A life long native of New Mexico. I'm just an ordinary guy trying to feed his family. I love food, cooking it, shopping for it, learning about it and, of course, eating it! I don't cook elaborate meals. Rather, I cook meals that are simple, use common ingredients, and result in delicious food! I also love watching my family and occasional guests enjoy what I make for them.

Love to grill and barbecue. Big fan of Southwestern and Tex-Mex dihes. Enjoy pretty much any authentic Mexican, Puerto Rican, Cuban and in general Caribbean foods. Have been trying my hand at some Cajun and Creole dishes as of late.

This version of meatloaf was very good especially the glaze. I thought the glaze was excellent. My family really liked the meatloaf but for me it was very tasty but just not my style. I guess I'm just a meatloaf purist who does not care for cheese in his meatloaf.

Grandma's Meatloaf

This is a great recipe for a great meatloaf. My family loves it. I also tried it using 93% lean ground beef but it came out a little denser or drier than I liked. I will stick with 85% lean chuck or maybe use 93% but replace part of it with some ground pork. It is a crowd pleaser as written.

Awesome recipe to use up some left over baked sweet potatoes. This was probably one of the best tasting variations of cornbread I've tried in a long time. The proportion of flour to cornmeal suited our taste. The pumpkin and cinnamon added a new and delicious flavor dimension to the classic cornbread taste. Keeper!

Walnut Cookies

Walnut Cookies

These were awesome! I made them for my moms. She loved them, our family loved them, and I loved them too! My moms loves her sweets, especially cookies, and pretty much anything with walnuts or real maple. I found this recipe and realized that with a couple simple changes, it would satisfy all of moms loves. To get some maple into the recipe, I replaced half the granular sugar in the filling with pure maple sugar. I also added some maple sugar to the icing. Again, these were awesome!

Marinated Flank Steak

Marinated Flank Steak

Great tasting and great instructions. Using local grass-fed beef, I've grilled this twice as stated and two more times using the grilling instructions but changed up the marinade using a Southwestern marinade one time and a Caribbean marinade the other. All four times the steaks turned out perfect, having a tender texture with just a bit of chew and amazing beefy flavor! Everyone I served it to raved how good it was and wanted the recipe. Leftovers made great tacos.
