Balsamic Chicken and Penne PastaThis was really good. I simmered the leftover marinade in a saucepan to make sure it was well cooked. Just made it for a second time with greens rather than pasta. Both were delicious.

Beef Chili with BeansExcellent! Probably the best chili I've ever had. Lots of dimension to the flavor. I added a touch of brown sugar, which worked well. Plan to make this one of my mainstays.

Carne Con Papa (Cuban Beef Stew)Neither my husband nor I enjoyed this. It had a one-dimensional flavor (maybe it calls for too much oregano?) and wasn't at all spicy. It was also very watery, though that may be because I slow-cooked it.
