Ancho Pork and Hominy Stew

This was freaking fabulous. I used pork loin ribs instead of boneless loin, cause bone adds so much flavor. I used 2 cups of pork broth leftover from the "kickass carnitas" recipe also listed on big oven. I simmered the stew for two hours and the meat fell off the bone. I served it over brown rice. So good.

I added chopped cherries. Next time I will use 3 bananas as called for and try cream cheese frosting. Spices need increased - i will add more cinnamon and ginger. This recipe needs tweaked for my taste but it was very moist, very easy and got compliments.

Kickass Carnitas

Kickass Carnitas

This was moist, tender, delicious and easy. I cooked it in crock pot on low 17 hours. Then I spread it in a 9x13 pan & sprayed it lightly with oil then cooked it at 400 degrees in oven for 20 min to crisp edges. Yum. Unfortunately I used a 4.5 lb pork shoulder but did not increase seasonings. Duh! Next time I will increase garlic & hot peppers.

Very good, quick and easy. When I tasted it before serving it was a little bland. I didn't have Italian diced tomatoes, maybe that's why. I had already doubled the thyme so I added Worcestershire sauce. The next time I make this I will double the garlic, and maybe marinate the fish in lime juice, and add chicken broth.

Great soup. A trick I've learned is after sautéing onions and garlic in oil, add the salsa. Allow it to become fragrant and wake up in the oil for a minute or two before continuing with lime juice and cumin and beans.

This was surprisingly good. I wasn't sure how the cottage cheese would stand in for ricotta, but i didn't miss it. I used shredded zucchini frozen from last summer's garden. I think fresh sliced would be marvelous.

Great soup. This has become a go to recipe. I increase the thyme and added more spices (sage, rosemary, or basil). I drain the ground beef, and I cook the noodles right in the simmering soup - A one pot meal!

Don't add the spinach and simmer for 20 minutes! Wait until the end to add the spinach. It only needs to "cook" for 30 seconds or a minute until it turns bright green.

These are yummy. I make them using ground beef, but I'm sure they would be delicious with pork. Very quick recipe without a lot of chopping, and a short list of ingredients is a plus. I served this with a sweet Thai chilli sauce at my hubby's request.

The salad is wonderful, the dressing was too tart. I will make this again, but will have to adjust dressing. Maybe I'll try actual teriyaki sauce, or just use less lime. Also I subbed barley for quinoa - still delicious.

This recipe is foolproof! I have also made it with broccoli and it is delicious. Very, very, very good! Everyone who tries this recipe gets rave reviews! I need to bake it longer (55 min), and therefore cover the crust edges with foil, but I think that is just my oven.

Sooooo easy, very tasty, good for you AND a one pot meal! It's a no-brainer - this recipe is a keeper. The squash probably needs less cooking time, or a lower cooking temp. It sort of melted into the dish the way I cooked it today, which was still yummy. And the amount of chicken broth is left out... I used a cup. I used only 16 oz of precut bagged kale with a 9 oz package of gnocchi and it seemed like a winner!

Wow. I sub'd out a few things based on what I had**, and it turned out superbly. I doubled recipe for 2 loaves (good thing, 'cause one loaf vanished almost before cooling). For the 2 cups sugar I used 1 &1/3 cups white sugar and 2/3 cups brown sugar. For the four cups flour I used 1 cup white whole wheat flour, 1 cup rice flour, and 2 cups all purpose. Hubby hates pecans so I added chopped almonds instead. Next time I will increase bananas by 1 or 2, and use bigger chunks to bring the banana flavor front and center. This turned out waaaay yum. It had a caramelized crust almost like a cookie. The chocolate chips make it. Caramelicious chocolate chippy banana-rama bread. **This recipe calls for butter, but I use cooked beans in place of butter when I bake. Using beans means fewer calories, almost no fat, with boosted protein and fiber. Try butter beans or another white bean like great northern in this recipe. Hubby has no idea I fed him butter bean banana bread! He gave it

Great start, but bland as other reviews have mentioned. I added cumin, garlic powder, minced onion, coriander, red pepper flakes, curry powder. I added sour cream at the end and served over rice pilaf with curried cauliflower.
