Glazed Strawberry Lemon Streusel Muffins

Glazed Strawberry Lemon Streusel Muffins

Very tasty. I loved the streusel topping. I used orange zest instead of lemon (what I had on hand) and rolled oats instead of pecans (for a lighter more breakfasty touch), and both were tasty.

Lemon Pasta Salad with Tomatoes and Feta

Lemon Pasta Salad with Tomatoes and Feta

This is probably my favorite all time pasta salad. It is so fresh and tasty and very easy to put together. I have a love of farfalle, so I usually use them instead of penne.

Coconut braised Carrots with Cashews and Peas

Coconut braised Carrots with Cashews and Peas

This recipe is very tasty and makes great leftovers. I made this with farm fresh carrots and the flavor was out of this world. Definitely would make again and again.

Kohlrabi Puree

Kohlrabi Puree

This recipe was a fair amount of work for modest rewards. Not as good as a simply creamed spinach, and it generated a lot of dishes to wash. Maybe I just don't like kohlrabi that much, maybe it was the unappetizing green of the puree, but don't think I will be rushing out for more kohlrabi for this one any time soon.

Kale and Cheese Calzones

Kale and Cheese Calzones

It's a calzone: what's not to like? But all in all, I liked the kale filling. Kale has a little more texture and a nicer flavor after baking than spinach.

Spinach Soup

Spinach Soup

This soup is delicious-- the flavors are bright and refreshing while being also filling. This is the second time I have made this recipe and it was just as good as the first.

Farmgirl Susan's Savory Cheese & Scallion Scones

These were delicious and easy! I would definitely make them again (and they might just become a staple in our household). Thanks Farm-girl Susan!

Grilled Peanut Chicken Skewers

Pretty good, but not mind blowing.

Stir-Fried Bok Choy with Roasted Peanuts

Stir-Fried Bok Choy with Roasted Peanuts

Pretty good, but not as good as the baby bok choy with spicy black bean sauce. It just doesn't have as cohesive a flavor.

Creamed Spinach

Creamed Spinach

Easy and delicious. I sprinkled some bread crumbs on top just for a little textural contrast.

Thai-Style Sliced Beef Lettuce Wraps

Thai-Style Sliced Beef Lettuce Wraps

This was surprisingly filling, not surprisingly fun and messy to eat, and the flavors were great. I would definitely recommend marinating the meat overnight to get the best flavor. We are spice lovers, so I might spike the marinade with some Sriracha hot chili sauce next time, but otherwise delicious.

Red and Green Polenta and Pork Torta

Red and Green Polenta and Pork Torta

This was very tasty. I added extra cheese on top, but overall the flavors were tasty and I would make it again.

Penne with Tuna and Roasted Peppers

Penne with Tuna and Roasted Peppers

I liked this recipe. Be sure to use a good brand of canned tuna to get the best flavor. When reheating left overs, I added some champagne vinegar to add a little additional acidity. I would definitely make this again.

Skillet Vermicelli with Chorizo Sausage and Black Beans

This was delicious-- filling, well balanced flavors and great left over. I would definitely make this again.

Broiled Mustard and Brown Sugar Glazed Salmon with Dill

Broiled Mustard and Brown Sugar Glazed Salmon with Dill

This is a very tasty way to prepare salmon that allows you to control the cooking temperature (I like my fish on the rare side) while loosing little in the way of moisture (even thoroughly cooked, the fish doesn't get that chalky taste that I hate). It is easy and tasty-- one of my favorite ways to cook salmon.

Super refreshing and full of the flavor of summer. This was very light, yet very satisfying, especially with a BLT on the side :)

Ricotta Zucchini Pasta with Fresh Tomatoes and Herbs

Ricotta Zucchini Pasta with Fresh Tomatoes and Herbs

Be sure to use fresh zucchini for this, otherwise it can take on a distinctly bitter flavor. Also, but careful not to overcook the zucchini, or you can have the same problem.

Sweet/Hot Curried Zucchini Pickles
