Garden Tuna Salad

A native West Virginian, widowed 2 years ago after 50+ years of marriage and, now---having sold our farm in the northern panhandle of West Virginia---I'm living in a small village in central Ohio with my daughter and her family.  So . . . once again, I'll be doing some "family" cooking---rather than cooking for just one or two.

Mix and Match Casseroles

Easiest & quickest way to throw together a casserole! Tried this recipe using cream of mushroom soup, 1/2 of a 16-oz. package of frozen spinach, 2 tablespoons dehydrated minced onion, 4 cups uncooked wide egg noodles, 2 cans solid pack albacore tuna (undrained), 1 can (3 oz.) sliced mushrooms (drained) --- baked it in a 2-l/2 quart covered casserole for an hour --- topped it with 1/2 cup shredded cheddar cheese plus 1/2 cup crushed Club crackers and baked it for 15 minutes longer. Family said I would HAVE to make this again! (Served it with a cucumber and tomato salad with a dill dressing.)

White beans and Citrus Tuna Salad

Substituted a diced roma and a yellow tomato for the grape tomatoes; added about 1/4 cup diced red onion in addition to the green onion; substituted drained & rinsed cannellini beans for the northern beans; and, at the last minute, decided to try a garlic ranch dressing rather than vinegrette. Daughter and son-in-law had seconds . . . and asked that I make it again, with more garlic next time. Excellent recipe to "play around with"!

My family doesn't care for sweet vinegary tomate sauce. I plan to do what my Mom used to do with her cabbage rolls: Blend canned tomato soup with tomato juice. Also: to the meat-rice mixture, I'll add a little rubbed sage or thyme plus some finely chopped celery leaves.

If you and your family like barley, cook it ahead of time (in quantity) and store in the refrigerator for up to one week. It can be used to replace rice in many recipes. Also: Barley is known to raise good cholesterol levels while lowering the bad. [I posted this recipe.]
