What's for dinner?
Retired from nuclear power plant electrician job a couple years ago. Hobbies are woodworking, computers, web page design, and cooking. I do most of the cooking now. My wife did most of it for 38 years while I worked outside and I figure now that I am retired I can do some of it. Other than cooking my passion is woodworking and making pens from various exotic wood and acrylics. I send 10 -15 of these pens to our Canadian military personel along with letters of support and encouragement every few months. You can view some of the pens and get information about the Pens For Canadian Peacekeepers Project from my website

Pan Seared Salmon with Avocado Remoulade

A LITTLE BLAND I would eat it if offered but would not likely make it myself.

Spice Rub for Grilled Chicken

Spice Rub for Grilled Chicken

Great rub. A little more heat than my wife likes but it's one I will be using many more times.

Crispy Baked Potatoe Fans

Crispy Baked Potatoe Fans

When I first saw this one I thought it would be both different and good. It was.

Seafood Chowder-By Renette

Seafood Chowder-By Renette

Great taste. I made one major change in that I used a fresh broth I made this morning using lobster, crab and shrimp shells instead of chicken broth. Also melted a little cheddar into it just before serving.

Dutch Meat Loaf From Hunts Tomato Sauce Can

Dutch Meat Loaf From Hunts Tomato Sauce Can

Simple to make from a not so well stocked kitchen and my grandaughter ate it. I was forced to make a couple substitutions ie. 1 tbsp white sugar instead of brown, 2 eggs, and 3/4 cup dry breadcrumbs. Also pureed the onions which my grandaughter says she hates (if she can see them).

Hamburger Buns (Low Sodium)

Hamburger Buns (Low Sodium)

Finding good tasting low sodium recipes is a trial and error thing. These buns turned out great. To cut down on the amount of bread we made 17 buns instead of the 10 called for. I can see I won't be buying any more hamburger buns.

Outback Steakhouse Steak Seasoning

Outback Steakhouse Steak Seasoning

It's been a while since I''ve had a steak at an Outback so I can''t comment on how close the spice is to theirs but it sure added some good flavour to the steak I had tonight. Half the recipe is enough for two reaonable sized steaks. The company I have been buying my steak seasoning from just lost my business.

Outback Steakhouse Alice Springs Chicken

Outback Steakhouse Alice Springs Chicken

Took a while and some work to make this one but definitely worth the effort. My wife said it's a keeper so I will be making it again.

Old Mexico Fish Fillets

Old Mexico Fish Fillets

Easy to make and great flavour. I doubled the garlic and used a few more mushrooms than called for just because I had them on hand. Make this one again.

Curry Powder

Curry Powder

Appears to be milder than the store bought I am used to, but then I guessed at the the amount of powdered cardamom would equal 3 seeds. Great aroma and nicer flavour when made fresh. [I posted this recipe.]

Chicken Korma

Chicken Korma

My wife mentioned she would like a curried chicken and I remembered I saw this one yesterday. I also made the homemade curry powder that was mentioned in the article. It was a little milder than what I was used to so I will add more next time. Great aroma and flavour.

Cottage-country Cedar Salmon

Cottage-country Cedar Salmon

The original recipe called for a cedar plank. Not having one and my other hobby being woodworking I had lots of cedar pieces laying around, so I smoked it. Since my wife is not a fan of spicy food I cut the cayenne in half. This takes a while to cook but tastes great, well worth the investment in time. [I posted this recipe.]

Fried Wild Rice with Mushrooms

Fried Wild Rice with Mushrooms

Despite the title there is no mention of mushrooms in the recipe. I added 6 chopped mushrooms. No worchester sauce mentioned in the ingredient list although is is called for in the instructions. I went with 2 tbs and more at the table for those that wanted more. I also substituted left over chicken for the ham. It made a good dinner we both enjoyed.

Oven Baked Spiced Fries - V 2

Oven Baked Spiced Fries - V 2

These were good, not to spicy for my wife just the right amount. Will be making these as standard from now on.

Baked Macaroni and Cheese

Baked Macaroni and Cheese

Definitely not low calorie or low fat. I was short on milk so I used 1.5 cups milk and 1/2 cup cream. Great creamy flavour I will be making again. [I posted this recipe.]

Southwest-Style Meatloaf

Southwest-Style Meatloaf

I was out of jalapeno peppers so I substituted a habernero. I thought it was good but my wife found it a little spicy. I'll go with the jalapeno next time.

Crispy Baked Chicken Fingers

Crispy Baked Chicken Fingers

We tried these last night and found they were pretty good. I ran out of the coating before I got them all done so did the last few with straight bread crumbs. There wasn't a lot of difference in taste but the coating as per the recipe did look a lot nicer.

Pizza Dough

Pizza Dough

My wife and I generally only make one pizza now. She lets the other half of the dough rise again and bakes it off as a small loaf of bread.

(Freezer) Cabbage Rolls

(Freezer) Cabbage Rolls

After the 2nd leaf tore to shreds trying to get it off I put the whole head in boiling water for 12 minutes. They came off easily after that. I doubled the recipe and got 18 cabbage rolls.
