What's for dinner?
Lemon Artichoke Chicken
I believe in the philosiphy of "Eat Right for Your Type";, where you eat according to your blood type. Being a type A and my husband is a type O, I try to mix up our meals. I try to eliminate bread (unless spelt bread) from our diets, a favorite dinner out is sushi at a local sushi restaurant nearby. I enjoy hiking with my dog, Bella and gardening when I can (unless we have snow), love spending time with my kids (grown and college age) and my husband. I hope my children develop my love of cooking someday, I try to nudge them along the way with gifts of cooking items on birthdays!

I like homemade soups, and I make a lot of soup all year long. I have a VitaMix and it is my favorite kitchen appliance! I like salads and yummy wasabi dressings, lime vinagarettes, and my homemade thousand island dressing my mom taught me how to make. I have an old recipe handed down from my grandma, it is a hearty moist Pumpkin Bread, that I make for everyone, even my local sushi chef!

Chocolate is a weakness of mine, good German or Swiss chocolate-- I love baked goods and I give goodie baskets out to varous people during the holidays of my baked goodies.

I love a good bottle of Zinfandel, too... or some Merlot, or Malbec.

Bake at 375. I used leftover coffee to add moisture. I've never had a problem getting them out of the pan and they have never been crumbly. ALL my family request these often!! I think if you just add more cold coffee to them they will never be dry

this was delicious! I modified just a bit: added 1/2 of small lemon juice, used 2 avos, used sweet white onion (as I was out of the green onions), used fresh BYP( that I soaked and cooked, which made it very economical!)-2cups, I omitted the canned corn, added a roasted red pepper and a serrano chili.
