What's for dinner?

My name is Kami. I live in Virginia near Fredericksburg. I am a stay-at-home mom to one little girl and another on the way. My husband and I own and run a snake breeding business that started in 2005. I enjoy cooking (amongst many other things), which is how I stumbled upon this site.

Recipes I've Posted (all 2)

I enjoy baking more than anything. My favourite thing to bake is anything that turns out -just- right. I also enjoy experimenting with new foods and ingredients that don't always follow the recipe I'm using. Half the time my experiments compliment the outcome, other times it's mostly edible. ;)

SO. GOOD. I didn't have celery when I made this, but used cucumber instead. It was great!

Butterfinger Cake

Butterfinger Cake

Oh. As for those complaining that this is in the "nut free" section? Peanuts are not, in fact, nuts. Research, people, research!

Sausage Gravy

Sausage Gravy

This is the same exact recipe I use. I also use it for cream chip beef. (I use Buddig beef, pulled into pieces.)

Avocado Tomato Salad

Avocado Tomato Salad

I was just going on about needing to make different, healthy side dishes. This is great! I didn't add jalapeƱo as I didn't have any on hand, but it works out since my 1 and 2 year olds were eating it as well. Thanks for posting such a great recipe.

Cajun Chicken Pasta

Cajun Chicken Pasta

Great recipe! I've made it twice now. I would definitely add more spice, but I have to feed my 1 and 2-year-olds, so it's perfect for them. ;)

Simple Blender Hummus

Simple Blender Hummus

I made it and hardly got a single bite of it. My one and two year old ate it with wheat thins (I know pita chips are better, but we had it on hand :D) I forgot to to add the lemon juice, but it was still very good! I'll have to pick up another can of garbonzo beans. Thanks for posting!

Hot Crab Dip

Hot Crab Dip

I've made this twice now, added a can of artichoke hearts (chopped), fresh backfin crab and some garlic powder. Served with tortilla chips. My husband loves it. I doubled it and took it to a Holiday party recently. I was asked for the recipe. ;) Thanks for sharing!

Bacon and Cheese Stuffed Chicken

Bacon and Cheese Stuffed Chicken

With the cheese and bacon, also frying the chicken in the bacon grease, by me sprinkling with salt and pepper, made it waaaay too salty. Otherwise, with the garlic and paprika I added, it was good.

Easy Taco Soup

Easy Taco Soup

More like a taco chili! I added a BIG can of diced tomatoes, one can of Rotell, 2 cups water with 2 beef bouillon cubes, extra ground *turkey* (it was on sale and just as good!), and lots of garlic. I. Forgot. Cheese. Blasphemous, I know! But you know what? Still crazy delicious.

Will definitely be making this again.

Butter Pecan Pie

Butter Pecan Pie

Made this for Thanksgiving dessert, and it was very good! (So I was told. I don't personally like pecan pie, but from the comments I got--it was good!) My husband had seconds. :D Husband having seconds doesn't lie. He told me to add this to his favorites. Awesome! And easy. Though I did use store-bought pie crust. (Hanging my head in shame, I know...) I simply didn't have enough time, but it turned out very well. :D Make. This. Pie!

PANKO CHICKEN

PANKO CHICKEN

We LOVE this! I tweaked it a bit to our liking. We used all thigh meat, much more lemon and garlic, and Parmesan cheese since we had no asiago. Delicious! I've made it three times now. Even my 2 year old likes it.

Flounder El Capitan

Flounder El Capitan

This was very good. I added an extra cup of cheese and extra lemon juice. Still could have used more lemon and definitely garlic.

Flounder El Capitan

Flounder El Capitan

You know, I was completely unsure of this recipe. Flour, milk, wine AND lemon? Eww! I was wrong. Although I think it needs MUCH more lemon, at least another cup of cheese (which I added both), some garlic and capers, this was *very* good! Seriously . Try it!
