What's for dinner?


Some of my favorite foods are mexican, thai, italian, veggies, ice cream, pizza... 
 
I tend to cook what I know, so one of my resolutions is to try more recipes.  Stuff outside of my comfort zone, like panang curry, or pad thai.
 
I prefer lower fat, lower calorie dishes loaded with veggies and/or whole grains.  LOVE veggies!

Very easy, and well received at parties! Have made multiple times. Will probably cut the sugar down a bit next time, it's a little too sweet for me.

White Chicken Chili

LOVE this recipe! A friend had a white chicken chili at a party one time, and I didn't get the recipe. Turns out this is it! I used Fat Free Half and Half and light sour cream and it was very yummy. I'd like to play around with the beans, maybe introduce some garbanzos or something, I don't know... but YUM. Love it, and will make it often!!

Devonshire Sandwiches

I made this as the Pittsburgh food for our Superbowl party. I cut the toast into quarters, layered one slice each of ham and turkey (leaving a few without ham, since i don't eat pork) and a spoonful of the cream sauce on each, then topped with parmesan and broiled. they were good, altho' my husband said he wasn't too fond of them. The sauce wasn't very flavorful, so I kept adding pepper and salt, and a dash of paprika. Next time I might add a bit more butter, or something to spice it up a little more. Otherwise I thought they were great. They do get a bit soggy if sitting around so best to eat right away.

It was tangy, flavorful, and definitely a recipe I'm adding to my collection. I broiled it for the last minute of cooktime to get the color on the top, but otherwise, the cooktime in the recipe was dead on. I also used mahi mahi, as it's what we had. It was a very quick and easy meal to make!

I varied the recipe a bit to use what I had on hand. I used frozen spinach (1 10oz) defrosted, frozen onion mix which had red and green peppers in it too, and carrot instead of celery (julianned and chopped). I generally try to pump up veggies in recipes, so I didn't really measure... :o) My husband, who initially said "lasagna should be stuffed with meat and cheese only", and scowled when I mentioned mushroom and spinach, ate it and LOVED it. The fresh basil is a must. I think next time I'll add a bit more spinach. ;o) Definitely a great recipe and I will make it again for sure!
