Greek Style MoussakaGreat recipe. I also did the salt/drain routine as outlined by sgrishka and would reiterate the need to watch the amount of oil used in the browning process, I actually used olive oil PAM. I didn't coat the eggplant prior to frying but will probably do it next time toe help bring out the character of the eggplant in the dish. Also, I've never seen an 11x16 dish but my entire recipe fit in a 9x13x2 dish perfectly.

Skibum's Black Bean and Corn SalsaI've tried many recipes and this is my favorite by far. Cooking the Basic Salsa makes all the difference.I also have a scratch recipe for the basic salsa if there is any interest.

Thanks for the medal, I really appreciate it, I agree, too salty, I like to make alot and it stores in the fridge for a long time, I also put it in a squeeze bottle and use it on my burritos, quesadillas and eggs in the morning.
