What's for dinner?

I have always loved to cook and right now my collection is mainly recipes that were my mother's. She was a great collector of recipes and had a knack for finding the best ones. This year for the holidays (2007), I started a cookbook of my mom's recipes to give to my sisters. (My mom passed away from cancer in 1997.) I love to cook for other people and entertain, but I never seem to have as much time to do that as I would like.

I've rarely met a food I didn't like and I love to cook! (Although I am less enthusiastic about cleaning up from cooking!) I'll never forget that when I was in fourth grade I thought that I would make homemade eclairs for mom on Mother's Day. The kitchen was completely wrecked with flour everywhere. It looked as though a flour bomb had gone off!  Probably not the best present.

My husband and I really liked this. I think that because he likes spicier food, I might try adding some crushed red pepper to the sauce to jazz it up a bit. We'll see how that goes! I also used boneless skinless chicken breasts and cooked it at a higher temp for a shorter amount of time. It was fab! Thanks to the original poster - plus all of you who gave feedback on the modifications!

Rio Grande Casserole (or Dip)

Instead of baking, you can microwave this dish, but I don't think that it tastes quite as good. The original name had the word "soup" in it - mainly because it can be a bit runny from the vegetable juices that come out during the baking process. I usually serve this as a main dish, but it can be used as an appetizer (hot dip) as well at parties. The nice thing is that this can be made ahead of time and put in the fridge before throwing it in the oven. Like other recipes, you could add other topping ingredients (like olives) if you like. You can also adjust the amount of each topping to suit your own taste. [I posted this recipe.]

The original recipe only calls for the cheese and pepperoni toppings. However, over the years I have regularly added mushroom. (I think it's best that you either use canned ones or if using fresh, saute them in butter first.) It really easy to add other toppings to your taste. Another thing that makes this dish wonderful, is that it's easy to premake and put in the fridge until time for dinner. (You still do the first baking, but wait on the 2nd one. You will have to bake it longer since it will be cold.) I'm also convinced that this is one of those dishes that tastes just as good the second time around reheated in the microwave - if you have any leftovers that is. [I posted this recipe.]
