What's for dinner?
I live in east Pasadena on the outskirts of Los Angeles. I love to get fruits & veggies from the farmers market every saturday, if i can afford it. I've learned the quality/freshness of ingredients really matters in a dish. I usually only cook dinners, but i do love to try and perfect guacamole. I'm not good with pastries, plus i don't really like sweets much. I'm a salt lover. Lately I've been trying to cut out cheese and butter from my meals. I love green veggies, onions, and herbs, because i think it can really bring out the flavors in whatever you're cooking. I need more practice with the broiler, and I want to start cooking more fish. I like a good cup of coffee, cross-word puzzles, AM radio, playing with my dogs and grooming them, comedy shows, collecting recipes, tanning, volleyball, candles, collecting eye shadow colors, drawing, and gardening. I will be going back to school in the fall to get my master's in social work. I am 27, 5'11, and a fantastic cook if i may say so myself! My boyfriend is lucky I like to cook hehe =)

Recipes I've Posted (all 11)

I enjoy eating meals with lots of spices in them and onion. I like meals that have very little prep time. I am in need of some sort of chopper/food processor. Christmas is coming up, you never know! I am in the process of collecting my aunt's authentic Cuban recipes that she inherited from my grandmother. Sadly, when my grandmother was alive I didn't like to cook so i never asked for them. Now I have the inside scoop to real Cuban cuisine. Most books integrate creole with cuban food, and that's not the way my family cooked. I love cooking black beans during Christmas with yucca root, it reminds me of Noche Buena. I really want to get recipes that make a lot of food for lots of leftovers throughout the week. I don't like cooking everyday. When it's hot I don't like to use the oven for obvious reasons.

Mashed Potato Casserole

Mashed Potato Casserole

I knew this would be a hit with my friends because it has butter, cheese, and cream in it. I also added 8 oz. of cream cheese and used unpeeled red potatoes. It was delicious! I think you can pretty much use any cheese that you would normally put on a lasagna or enchiladas. It's not necessary to buy expensive cheese. I will make this again for sure!

Lentil Loaf

Lentil Loaf

This recipe is not good. It seems like someone just put together a few things they had left in the pantry and got creative. It's also a poorly written recipe. How can you put a vegetable stock cube in the loaf without dissolving it first? Also, at the beginning it says to heat up some water in a kettle, but then it never says to continue cooking it under fire. It implies I just let the lentils sit in the hot water and cook that way.

Roasted Cauliflower

Roasted Cauliflower

Pretty impressive. I would buy a few heads of cauliflower if you're feeding a lot of people because one isn't enough. I went with the lemon, rosemary, and capers. It was very good and I am surprised how well the cauliflower held up in the oven. Definitely need to make way more next time. One head yields like 3 small servings.

Mushrooms Sauteed with Garlic Butter

Mushrooms Sauteed with Garlic Butter

Use small white mushrooms, not just the white ones at your local grocery store. I tried it with the large mushrooms because I figured it didn't matter, but it does. I would have liked them to have had a stronger garlic taste, but that depends on the cook I guess. Overall a nice quick way to get some veggies in your diet.

Spicy Southwestern Pasta Salad

Spicy Southwestern Pasta Salad

I like the flavor of the lime juice and the cilantro. I used a ghost pepper salt that I bought at a specialty spice shop that added a lot of spicy flavor to the dish. I would add a little more pasta and I would use shallots instead of red onion. Red onion is way too strong so I would suggest shallots. Other than that, it was fantastic! I am going to triple the recipe and use it for my potluck. Thanks!

Zucchini Cakes

Zucchini Cakes

All ovens are different. I have an old oven so 350 is really hot. Next time I would make them smaller and on 300 degrees. "allaboutfood" is right, be careful with the old bay, it overpowers the cakes slightly.

Pasta Puttanesca Sauce

Pasta Puttanesca Sauce

I LOVED this sauce. It's killer! It's hard finding a good Puttanesca sauce in a jar. Actually, it's impossible so make your own. It isn't cheap. It'll run you about $25 including the pasta, but if you are making dinner for that special someone you will win their heart with this recipe. [I posted this recipe.]

Broccoli, Mushroom and Double Cheese Quiche

Broccoli, Mushroom and Double Cheese Quiche

I have some issues with the recipe... 1.) You didn't mention the vegetable oil in the recipe, but still called for it. 2.) The recipe also called for 3 kinds of cheese, and the recipe only mentioned two. 3.) I would add one more egg and less cream because even when it settled the custard was mushier than i expected. (Do cage-free eggs make a difference?) 4.) The recipe for the dough was very confusing, but luckily i did it correctly in my own way. 5.) Overall, it was very very good. However, I will not be making this dish again because it contains a lot of fat.
