Cheesy Chicken and Rice Bake
My husband and I are newlyweds. I am a paramedic for a rural area 911 ambulance service and my husband is a funeral director and mortician. We live in a small town in Texas. We love listening to music and still are trying to find time to sit and play our guitars together. We also LOVE TO EAT!!!
Love eating spaghetti. Seems to be the one dish that I've really mastered over the years. I love to make big amounts of food and feeding EMS crews at work. I took over making Thanksgiving dinner after my mother died in July, 2005. I enjoy it when people compliment me on foods that I have made. Just trying to expand more on that and venture out into what I consider dangerous territory. I just boiled and deboned my first chicken the first weekend of February. It was gross and rewarding.

Parmesan Crusted ChickenMy husband really liked the Parmesan Crusted Chicken. He even ate left overs of it the next day - which he never does!

Memere's Mashed PotatoesI just finished making these for Thanksgiving tomorrow, and I think I'm going to need to make another batch. These mashed potatoes are AMAZING!!!! I made 5 lbs of potatoes and used 2 sticks of butter. I also used gourmet sea salt instead of regular salt. Yuuuummmmyyyy!!!

Welcome! Thanks for serving the community as an EMS, that's terrific. I hope you enjoy BigOven. Here's a chicken recipe that I just love -- not sure you have a rotisserie, but it works very, very well if you've got one.
