Mmm! I like this a lot. Pretty easy, pretty fast… If you had leftover quinoa, it'd be really fast! I used baby kale "washed and ready to enjoy" so no prep work there. Used cashews instead of almonds since that's what I had on hand... Used garlic and ginger powder instead of fresh. Would make again

Eating it hot out of the pan, it was quite good. Eating it as leftovers... Don't recommend it at all. I used silver beet instead of kale. Kale would have been better. When it's hot, the extremely zippy sauce *almostt* hides the boringness of tofu!

I pan seared the scallops in butter instead of broiling them, and came out with a buttery grapefruit sauce... It was delicious! We ate the kale and scallops with rice, too.

For me, it was too rich (like eating a tub if sour cream, which basically it was), not flavourful enough, and an awful purplish-grey colour. It wasn't as fast to make as I thought it would be, either. I certainly wouldn't make it again.
