Kale Salad with Quinoa, Tangerines and Roasted AlmondsMmm! I like this a lot. Pretty easy, pretty fast… If you had leftover quinoa, it'd be really fast! I used baby kale "washed and ready to enjoy" so no prep work there. Used cashews instead of almonds since that's what I had on hand... Used garlic and ginger powder instead of fresh. Would make again

Poached Chicken with Bok Choy in Ginger BrothEasy, fast, delicious, healthy. Can you ask for more? Will make again and again.

Chile lime tofu w/ quinoa and greensEating it hot out of the pan, it was quite good. Eating it as leftovers... Don't recommend it at all. I used silver beet instead of kale. Kale would have been better. When it's hot, the extremely zippy sauce *almostt* hides the boringness of tofu!

Anna Maria Seafood PastaI was surprised by the lack of flavor considering all the ingredients. I should have added more cayenne pepper (which I used in place of chillies). To be fair, I did cut some corners but I still won't be trying this one again.

Peach Quinoa with Flax and NutsAfter cooking the peaches as instructed, they lost all flavour. It took longer to prepare than I would like, and the end result wasn't exciting enough for me to make again.

Pancetta & Pea RisottoYum! I made it with pancetta instead of bacon and edamame instead of peas. Topped it off with LOTS of Parmesan. Quick and flavourful!

Angel Hair with Sundried Tomatoes and Goat CheeseNothing is quick enough when I'm starving at the end of the day, but this is relatively quick and SO delicious! I add cayenne pepper to give it some kick, and sprinkle fresh basil on top instead of parsley

Black Bean LasagnaDelicious. Freezes very well. Add extra cilantro, it's just fantastic!

Broiled Scallops and GrapefruitI pan seared the scallops in butter instead of broiling them, and came out with a buttery grapefruit sauce... It was delicious! We ate the kale and scallops with rice, too.

Blueberry Banana BreadDoesn't taste bad, but there's nothing interesting about this loaf. It's too dry, and I think has too much baking soda. Wouldn't make again.

Portabella Mushroom StroganoffFor me, it was too rich (like eating a tub if sour cream, which basically it was), not flavourful enough, and an awful purplish-grey colour. It wasn't as fast to make as I thought it would be, either. I certainly wouldn't make it again.

Ginger Ale Pork ChopsMy only qualm was that it took a bit too long to make on a weeknight after work. But it was super delicious!! Does anyone have any recommendations for what to serve it with or over?
