Foil-Pack Chicken and Broccoli Dinner (15)

Foil-Pack Chicken and Broccoli Dinner (15)

This was awesome, a new weekly favorite I think. My preschooler even loved it! I was missing some ingredients, so I used cooked rice, provolone slices, and asparagus instead of stuffing, cheddar and broccoli. I think it was still great but next time I'll try it with the original ingredients.

Crab Cakes with Remoulade

Crab Cakes with Remoulade

I'm from Baltimore and this is my go to crab cake recipe. Except for the remoulade, because we don't use that in Baltimore. I've never bothered to try it. But the crab cakes are fantastic.

Classic Meatloaf

Classic Meatloaf

This is fantastic. We eat it all the time. I use ground turkey and I think that's better than beef. Yummy!

Sauteed Tilapia with Lime

Sauteed Tilapia with Lime

Awesome. I didn't use flour and I added some parsley for aesthetics but otherwise followed the recipe. It was really good. We eat fish a lot so this will be added to regular rotation. Thanks!

Impossibly Easy Chicken Pot Pie

Impossibly Easy Chicken Pot Pie

LOVED it. So did my husband and two year old. I followed the recipe exactly, but I did almost 3x the veggies. I can't imagine doubling the pastry, but I'm not a huge fan of bread-y pot pies. I did the pastry exactly the amount called for and I thought there was plenty. The one thing my husband said is that he wished it was in an actual pie shell, so I think next time that's how I'm going to make it.

Crock Pot Chicken and Beans

Crock Pot Chicken and Beans

This was okay. It needs something though. I added shredded cheese and salsa, but it was still a little bland. My two year old ate it though, so that's always a plus. I think that if you rolled this filling into tortillas, covered it with enchilada sauce and cheese and baked it, and then serve it with sour cream, it would be fantastic. I'll try that next time. The plus was that is was super easy to make, and it was mild enough to serve to the kids.

This was awesome. Even my 2 year old ate it. Leftovers didn't last long in my house!

Classic Meatloaf

Classic Meatloaf

This was phenomenal. I hate meatloaf usually, but I had seconds of this. My husband at half the loaf, and even my picky, almost two-year-old, loved it too, and even asked for seconds. I used ground turkey instead, only because that's what I had in my freezer. It took an hour to cook. I served it with mashed potatoes and mixed veggies. My husband, who hates ground turkey, has asked me to make this a weekly staple (and continue to use the turkey!).

Ham Jambalaya

Ham Jambalaya

I added corn to mine, and it was really good. For my daughter, I added shredded cheddar to give it less of a bite. I'm not a huge fan of spicy dishes so this was just the right amount of a kick for me.

You can also use 1/2 cup of frozen peas instead of the carrot. [I posted this recipe.]

Potato Cheese Soup

Potato Cheese Soup

You may want to try it with 1 cup of cheese first, 2 cups makes it very cheesy. [I posted this recipe.]

Lemon and Garlic Pasta

Lemon and Garlic Pasta

I think this recipe must be inaccurate. Luckily I tasted the "sauce" before putting it on the pasta. All you can taste is vinegar. I added some sugar to balance it out a bit but that still didn't take away the intense tanginess. It was almost not edible, we even threw away the leftovers because we didn't want to eat it again. The "sauce" is very runny, it never thickens up at all and there is just way too much vinegar. Maybe if you used 1/3 of the vinegar and added lemon and garlic it would be okay. Or just forgo the vinegar altogether, I can't imagine what it adds to the dish.

I used minced garlic and chicken breasts instead of thighs. It was SO GOOD, this one will be made again at my house!

Easy Pork Chop Dinner

These are the most tender I've ever made pork chops, aside from cooking them in the crock pot all day. They melt in your mouth. So good!

My husband liked it, it's pretty good. We will have it again. It comes out really tender and didn't take long.
