I am really learning to love to cook and explore! My partner is the real cook but I have learned so much and improve daily with his lessons and challenges. We enjoy travel, trying local cuisine and replicating it with our twists. The Food Network is my indulgence (Paula- if you're reading...call me!)!

Mexican is my favorite by far; but I like most foods! I grew up in a "meat and potato" family and enjoyed every minute of it. My fondest memories are my mom and grandmother in the kitchen on holidays. The smells, family, and fun bring it all together.

Choco-Flan CakeHey HuckleberryJenn, Even if doubling, the cake takes longer than the flan, so while it may be a couple of extra minutes, it's not much. Test the cake and if it's done, the whole thing should be. Thanks!

One Dish Beef StroganoffGreat and easy! I also added sauted onions at the beginning, and the mushroom soup along with sour cream at the end. Also, I added some fajita seasoning mix to the meat giving it just a little bit of heat.

Chile Rellenos - The Real DealGeesh, I can't believe I did that! I changed the recipe to 2 pounds. The last time I made them (before posting this) I made a dozen or so. Sorry for the confusion! You want enough beef to stuff the number of peppers you have - 1/4 to 1/2 pound each.

Choco-Flan CakeAll the ingredients will fit in a normal size bundt pan. Even if you choose to double the flan (as seen in photo), it will still fit, but you will see the cake rise slightly above the pan. You can also use a large rectangular cake pan if you need to size up the whole recipe.

Best Ever Blueberry Coffee CakeThis recipe is great! It also works well if you suddenly find you don't have blueberries, you can mix in a streusel or do just about anything and it will be great!

BBQ BananasReally good and easy. You must eat them quickly after grilling as they harden relatively fast. Also, I think I prefer to cut them in half and grill at some point to add some texture. Loved it.
