What's for dinner?
I live on the East Coast of Australia. My interests are cooking, reading, working-out, quilting and patchwork. Having worked most of my working years in the travel industry, I also enjoy travelling. I think BigOven is the best thing to have happened in my kitchen, I have a large family of 6 children and now 5 grandchildren, so I have always looked for economy, organization and cooking without too much effort.

Dixie Chicken

The whole family enjoyed this recipe. After reading some of the comments I decided to make a few additions to the recipe. I add 1 sliced shallot, 1/3 cup of good sherry, two minced garlic cloves and some black pepper to the sauce. Then added fresh thyme before placing in oven. Served with creamy mashed potato and green vegetables.

This is a keeper. Used low fat evaporated milk instead of the cream and milk, and I soaked the fruit in a bit of sherry for added flavour. Enjoyed by all the family.

Very nice. Used Chicken and Corn Soup (all I had)along with chicken thighs. Served with fresh corn on the cob and Guacamole on the side. Will make this again.

Tuna Chip Casserole

I did not have any chips in the pantry, so used pasta. Mixed the mushroom soup, milk, tuna through the cooked pasta and sprinkled a cup of grated cheese on top before baking. Quick and easy meal.

The family enjoyed this very much. I served the lamb between pita bread with salad, yogurt and hommus. Next time I will add a little lemon juice to the marinate.

Yes we would make this again. I used about 3/4 cup of brown sugar in the loaf, next time I will use about 1/2 cup as we found it a little sweet for our taste, but still a nice meat loaf.

A good meal, enjoyed by alll. Used champagne (left over from last night) instead of white wine and used fresh lime juice with a little bottled lemon juice as I did not have any fresh lemons. I will make this again.

This was a very nice meatloaf. Used garlic and herb flavoured breadcrumbs and added some grated parmesan cheese to the top of the meatloaf when adding the tomato sauce in the last 15 mins of cooking time.

Turkari Palaak Molee

We enjoyed this curry very much. I did not have any fenugreek in the pantry so I substitued 1/4 teaspoon celery seeds and when adding the lamb also added 1 teaspoon of maple syrup. The recipe is very quick to prepare, however, I boned and cut up the leg of lamb, so it did take a little longer.
