Hello and welcome. I am a stay at home mom and housewife. I have two teeneage boys. David 17 and Shane 16. I enjoy cooking and trying out new recipes on the boys and my husband, John Roy. Trying to feed three men on a one income family is definitly a challenge. Add to that I am diabetic so I try to eat fresh foods and keep things healthier for my family. My favorite thing to do is to whip up a meal with whatever I have in the kitchen then use the guys as taste tester. This has turned out great most of the time but I will admit there are some meals that the dog wouldn't even touch. We live in Louisiana. I grew up here and also in Alabama. So southern cooking and outdoor barbques are a must around our house. We love catfish fries, family barbques, and just get togethers in general. We love to go fishing, swiming, hunting, and just being outside. Baking is one of my downfalls. LOL I love to do it and eat it. Not good for a diabetic. This came from growing up around my Granny who baked all the time. When we moved from Alabama to Louisiana we would go back to Alabama and spend the summer with my Granny and Granddad. Granny would have pound cakes, pies, cookies and tons of other sweets ready to eat when we arrived. She cooked a huge southern breakfast every morning that included grits, bacon, sausage, biscuits (which are now known as Granny's ugly biscuits), eggs, with all the trimmings. So guess she is would be to blame for my love of sweets and breakfast. The reason I use BigOven is to keep up with family recipes handed down from one family member to the next. Some of my favorite foods include desserts. As I noted above I am diabetic so I am looking for ways to enjoy those items but still keep my sugars in control. I love chocolate, cakes, brownies, and just about anything sweet. I love fresh fruit and veggies. Summer time is great because of all the fresh items you can get. I love when the farmer's market opens. My favorites are strawberries, grapes, watermelons, and cantelope. I love corn on the cob, fresh field peas. Oh and can't forget boiled peanuts. Come fall deer is a must, catfish is at least weekly. My youngest son loves to hunt so he is constantly bringing in squirel for frying or dumplings. Rabbit stew is a great cool day meal. As for meals I like pasta, breads, red meats, just about anything with barbque sauce, catfish, crawfish. My favorite meal of the day is breakfast. In my household we always have a big breakfast either on Saturday or Sunday. We usually sleep in until around 8 or 9 am and then get up and make a big breakfast and eat as a family while planning our day.
