Beer BatterBatter was great. For the fish, I used cod cut on the diagonal (important in getting the cod flaky) and dusted with seasoned flour (added a little cayenne pepper and Old Bay) BEFORE dipping in batter, it just makes sense. This will be my go to recipe. With the leftover batter, I made onion rings.

Coconut Butter CookiesI am so glad I found this recipe! These cookies were an instant hit and have become a favorite at our house. They are delicious coconuty cookies, crisp at the edges and perfectly chewy in the middle. Anyone who likes the aroma and taste of coconut is sure to love these buttery, and easy to make cookies. I'm also thinking, if you like a little chocolate with your coconut you could drizzle melted chocolate over the tops.

Caesar SaladSimple and absolutely delicious! I did make a tweek ot two...I only used 4 (large) canned anchovy fillets and made garlic croutons from: 1 baguette French bread, 1/4 cup olive oil, 4 cloves garlic, and Kosher salt. When serving the salad, I topped each serving with shaved Parmesan cheese (shaved with a vegetable peeler).

Baked Chicken Cordon BleuGreat recipe, flavorful and easy. I used Black Forest Ham and a mixture of Gruyere and Baby Swiss. For the coating, I used Panko crumbs and fresh grated Parmesan. The smokiness of the ham gave this a really good yet different hint of flavor and the Panko crumbs produced a nice crisp crust. The only problems I had were that they took 30 minutes to cook and some of the cheese oozed out while baking...but delicious none the less.

Brined Roast ChickenWonderful dish...perfect for entertaining. I prepared the chicken exactly as directed but also added some garlic and fresh rosemary to the cavity before roasting. The chicken was really crispy on the outside and so juicy and tender on the inside and the flavor was absolutely fabulous!

Fastest Cinnamon RollsThis was fantastic! The cinnamon rolls were absolutely delicious! I don't understand the previous reviewers issues with the flour and butter measurements. The recipe has clear and concise baking measurements. It calls for 9 ounces of all purpose flour or for those who don't have a scale about 2 cups. In baking weight measurements are always preferred since volume measurements are imprecise and can vary greatly depending on many variables including whether the flour is scooped, spooned and leveled, or sifted first. As for the butter, the recipe calls for 2 ounces of unsalted butter. How much more clear or concise can you get? Also, I don't understand why people rate a recipe when they have made major changes to the original recipe. Substituting whole wheat flour for the all purpose flour, and estimating the amount, changes the recipe completely. You are no longer reviewing the posted recipe, you are now reviewing your own version.

Classic Eggs BenedictI must disagree with the previous negative review for the recipe being "hard 2follow could be more concise". I easily followed the instructions to the letter with no problems and it was so worth it! The eggs benedict turned out wonderful and delicious.
