Easy Roast Beef

My name is Twyla and I'm a wife and new mommy living in the Middle Tennessee area. I'm completely passionate about God, my family, travel, reading, music, good food and cooking! I love trying out new recipes and experimenting with new ingredients. I try to use local, fresh, organic ingredients whenever possible and develop recipes that are quick and easy to prepare. Our meals are usually healthy choices with grilled meats or fish accompanied by vegetables, salads and fresh fruits. That being said, we are also fans of real butter, full fat cheesecakes, gooey cinnamon rolls and bubbling, fresh from the oven, cheesy lasagna. Balance in life is important...!

It is delicious and surprisingly easy to make. I served the orzo with some roasted chicken breast and everyone loved the simple dinner. Well, almost anyway. My little ones wouldn't eat the peas but did clean their plates and my son asked for seconds. This will definitely be a favorite.

Again, absolutely delicious! Incredibly simple recipe for a crisp roast chicken that maintains tender and juice meat. We have had this dish in our regular family meal rotation for well over a year now, I strongly recomend it!

Mmmmm! Absolutely no reason to change anything. These pineapple bars came out great, had a wonderful flavor while not being overly sweet. The sour cream dough had a light sweetness to it and complemented the pineapple filling perfectly. The glaze added the bulk of the sweetness. I know I said, 'no reason to change anything' and that is true. These are perfect as is! But for a variation, I think adding some fresh orange or lemon juice to the icing would be good, and would complement the pineapple filling nicely.

Much healthier than deep-fried, I made these baked chicken fingers for our monthly church dinner. I did increase the size of the recipe to make about 48 servings and boosted the seasoning for our taste by replacing the salt with seasoned salt and adding some cayenne. The chicken came out moist and flavorful and was a big hit with our church family.

This was fantastic! For my husband catfish is "fried catfish". I saw this recipe for grilled catfish and decided to give it a try. I'm glade I did. We all loved it! Even my husband. The catfish was light, flaky and really well flavored. Next time I may add a little cayenne or maybe some crushed red pepper to add just a little zing.

Nice recipe, very simple to prepare. I did change it up just a bit. I added a tablespoon of honey and reduced the amount of sugar to suit our taste. The smoothie was delicious.

Thank you for the medal! Try this one for a summer time treat. The filling is made the same way, but there's no baking in the oven or merangue to make. It reminded me so much of S'more's with the graham cracker crust and chocolate.
