Garlic and Orange Marinated Grilled Pork Chops

Garlic and Orange Marinated Grilled Pork Chops

Marinated for 24 hours in tight ziplock, grilled and served with cuban black beans and fresh corn, and sliced avocado. Thought chop was good but not amazing. Hubby liked it tho'. I thought something is missing from the marinade, I even added few dashes of onion powder, and dash of salt before adding the meat. Needs something else to give it a zing... any ideas? Fresh orange rind? After grilled, never would guess it was orange juice as base.

Bourbon Chicken

Bourbon Chicken

Really good, but 3/4 t chili flake way too much. We like spicy, boy oye! I only used 1/3 t and it was just spicy enuf. Super easy to make. Did a nice dry wok sautee of brocolli, s---ake mushrooms and shallots just until al-dente, and plated it around the outside of the chicken & sauce over the rice (the way Frank's Noodle's in PDX does their General Tso's dish), and it was really good. Nice to take a bite of 'clean' veg with bite of saucy chicken, plus it looked prettier!

Butternut Squash Risotto

Butternut Squash Risotto

Much better method of roasted and adding at end, vs. cooking it in raw with rice. You actually get to taste a bite of squash vs having it all mushed together. We sprinkled cooked pancetta and fresh parmasen on top, and this is a winner! Be sure to not add any salt early on if doing pancetta and parma.

Slow-Roasted Pork

Slow-Roasted Pork

Figured out last time I made it with Shoulder roast, not pork-butt... BUTT wins! This time it did pull apart the way it's supposed to vs. boiled loin. Couldn't find Butt at my organic or Safeway or Albertsons, but found it at Winco. WInco Wins!... and i've forgotten the value prices at Winco so I'll be going back more often for staples even tho it's a longer trip.

Slow-Roasted Pork

Slow-Roasted Pork

I have this same recipe in a file somewhere but glad to have found it here. I serve with mashed sweet potatoes and oven roasted carrots, complement the salty smokey apple flavors. Made this many times where it just fell off the bone but last time it was hard not sure why

Sea Bass with Lemon Caper Fettuccine

Sea Bass with Lemon Caper Fettuccine

Made sauce as recipe, but didn't seem like enuf so doubled it. Added some (jarred) garlic as didn't want raw garlic in it but wanted some of the flavor. Mixed in cut up steamed asparagus in with pasta and sauce which I think was better than having it on the side. I'm not sure we'll do sea bass again tho', rather fishy of white fishes, but we'll def make recipe again.

Microwave Pecan Brittle

Microwave Pecan Brittle

Terrible! One bite, spit it out, threw entire thing in garbage. Followed directions exactly. Oh my god, the worst brittle I've ever tasted.

Herbed Lamb Chops

Herbed Lamb Chops

This was the perfect marinade! Husband thought it was the best lamb we've ever made. Served with roasted garlic mashed potatoes, and sauteed mushroom & green beans. Would have paid $35-40 for this meal in restaurant. So good!

Did recipe as is except for added 2nd banana per another reviewer's suggestion, and no nuts since hubby doesn't like them. I had to cook it 55 minutes tho, as the toothpick was still goey at 50 min. It still turned out perfect. Moist, nicely seasoned with the cinnamon and ginger, pretty flakes of green from the zuchinni, and soft banana taste. Hubby said it was a winner! Now that we did the taste test with the 1st loaf and all is well, will feel proud to give the 2nd loaf as a gift to our weekend hosts at the beach this weekend. Thank you Big Oven!!!

Cheesy Chicken and Rice Bake

Cheesy Chicken and Rice Bake

Husband really liked it. Used cream of chicken mushroom soup, can mushrooms, and few dashes of paprika. Used Italian Cheese blend instead of cheddar and really glad I did. Served with sauted zuchini and sweet onion with a little cheese on that too. Turned out great. BTW: when first took it out of oven, thought it was going to be too runny but it bound up perfectly after letting it sit for a few minutes.

Italian Stuffed Peppers

Italian Stuffed Peppers

Used spicy sausage, minced some mushrooms and a baby zuchini into the meat/rice mix. Served a lightly dressed salad of greens, cucs and garden tomato on the side to help cool down the spice of the sausage. I thought it was all pretty tasty, but husband thought this wasn't one of his favorites and not sure he wants it again.
