Chocolate-Chip Banana Muffins

Chocolate-Chip Banana Muffins

I regularly make a double batch of these in the hope they will last more than an hour. The whole family love them, but I have to hide the choc chips from hubby until I've made them!

Anzac Biscuits

Anzac Biscuits

Almost the same as the Women's Weekly version except for the following: 1 cup sugar, 1 1/2 teaspoons bicarb and cooked in a slow oven. I always prefer less sugar, so thank you for this version.

Apple Meatloaf

Apple Meatloaf

Excellent recipe. Thanks. I added some grated carrot for extra veggies. The kids love it. I'm thinking of adding a glaze to it as well.

Anita's Crockpot Lemon Chicken

Anita's Crockpot Lemon Chicken

Changed the garlic salt to 3 cloves of garlic, and added some onion and carrot to the pot (didn't have any other vegetables). I love a good sauce on steamed rice. Might try the chicken broth version next time, and that stuffed pepper looks good.

Romano's Macaroni Grille Vodka Rustica

Romano's Macaroni Grille Vodka Rustica

The ham instead of prosciutto is a good idea. I used half the quantity of cream. This is fabulous. Really tasty, and worth the effort. Now that we have the marsala and vodka, we won't have to buy them again for a long while. I recommend this to anyone. I'm guessing about the time taken, because I prepared some at home, then finished it at my parents' place.

Upside Down Peach Cake

Upside Down Peach Cake

Choose peaches that are firm but ripe. To peel, place in a saucepan of boiling water for 30 seconds, then refresh in a bowl of iced water. Drain and peel. If your peaches are on the soft side, remove skins from cake at end of cooking. [I posted this recipe.]

Great recipe for the kids - can be frozen without the sour cream, then reheated and sour cream added.

Dark Balsamic, Soy and Honey Glazed Grilled Northwest Salmon

Dark Balsamic, Soy and Honey Glazed Grilled Northwest Salmon

My kids both willingly ate this - that's pretty rare. I'd like to try the marinade on some different fish, or perhaps on chicken. But the salmon was fabulous.
