I live in the beautiful Northwest where food is plentiful and many ethnic influences create wonderful fusions. Our seafood is outstanding in varity and versitility. I work in the medical field and healthy eating is important to me. I love to travel and expierience other cultures and that means food-it's wonderful.

This has been a staple brunch casserole in our family for years, don't know the original source. Adding a 1/4 c. sherry to a second can of mushroom soup and thinning with some milk and heating to make a nice sauce is a nice addition.

Don't be daunted by the size of this recipe, it's basicly three small recipes in one. What a great way to use lima beans! They tasted great. The presentation was stunning-"Just like a reasaurant" and "It's too pretty to eat". My husband complimented me again the next morning, WOW! This is definely a keeper. Thanks Emeril.
