You put the cheesecake pan inside of a bigger pan and fill the bigger pan with water. It prevents the top of the cheesecake from cracking and helps the cheesecake cook evenly. If you don't trust your spring form pan not to leak, you can place the pan of water on a lower rack. Hope this helped! — amandakrylo 9/8/2013

i made your pretzel rolls. i want to make them into hamburger size rolls. however when i boil them they collapse to half height. what am i doing wrong? i love the taste and texture. they take hamburgers up one notch.
