Chewy Granola BarsThese are great! I added some crunchy peanut butter and omitted the raisins/dried fruit and I used milk chocolate chips. Picky boyfriend tested and approved! His friends also liked them. (Had to hide 'em so I could have a couple for breakfast in the morning)

chicken enchiladas w/salsa verdeThis was absolutely wonderful! Restaurant quality. Even my picky boyfriend loved them. I had leftover tortillas so I cut them up into chip size triangles and fried them in olive oil in a skillet until crisp and served them with the remaining tomatillo salsa as a side to the enchiladas...Yummy! This is definitely my go-to recipe for enchiladas from now on.
