Best Ever Caramel Corn

I've made this recipe twice -- and love it. I substituted the corn syrup with brown rice syrup (no adjustments) and it is delicious. I increased the popcorn by two cups the second time (I just wanted to try to get lighter coverage). It is so crispy and light. It is simple and delicious.
