My husband and I live in the outskirts of Chicago and like everything about it except the winters. They are way to cold and snowy for me. (I think I was made to live by a beach in the tropics somewhere) I relax by sitting, wrapped in a blanket in winter or in my flower garden on the deck in summer, reading a book or cookbook and sipping chai (hot or iced).

I enjoy making new recipes quite often for my family and friends. They can often be heard asking "Mom, do you remember  the dinner that had this or that in it from a few weeks ago? Can you make that again?"  Well with this menu planner I will now be able to look back and see what I made and make it again.Thanks a lot. I am also looking forward to all the new recipes available to try.

My husband and I are just entering that empty nest stage as well as grandparent stage. We hope to enjoy more "date" nights, as well as traveling the world.

Parmesan Crusted Chicken

I made this wonderful recipe for my husband last night. Wow, we both loved the moist chicken but crunchy outside. I have tried a lot of Chicken Parmesan recipes but this one is far superior. Most of the other recipes the breading came out soft and the parmesan flavor was lacking. I paired this with anglehair pasta and marinara sauce. With a caesar salad and crusty bread on the side. I will be making this again. 2/15/2008
