My family enjoyed this, but a full bowl was too much for our pallettes. Next time I believe I will serve it in a cup and have a side salad. I would definitley serve it as a first course for a big meal with friends. I love that it does not have ginger in it. Thanks. — happymeilz 12/2/2013

Great recipe. Next time I will add more lime juice. I did 2 c of water to 1 c rice. I also added a half of can of zesty tomatoes (they had jalapenos with them) for extra spice and vegetable. I served it with Pepper Rubbed Pork chops topped with guacamole and it was a fabulous dinner. I see where this could go with many latin dishes in our future. Absolutely, without a doubt, THE BEST homemade guacamole ever! I will never buy the spice packet to add to avocados again. This is exactly what I have been looking for over at least 2 years. THANK YOU!! I did have to modify because I did not have a green onion or fresh tomatoes. I used a 1/4 of a can of zesty diced tomatoes (they had jalapenos in them) and a 1/4 of a small yellow onion. I did about 1 Tbsp of chopped cilantro because I love it. Fabulous Gaucamole!!! 9/17/2012

The pork itself was good and moist. The jerk paste didn't taste jerk to us. The paste tasted mainly like cinnamon and no heat at all. We will make again, but next time cut way back on the cinnamon and kick up the cayenne. Thank you for the idea. — tyson 8/26/2012

My family really liked this dish. I did find that the cornstarch and egg breading for the chicken was not worth my time. Next time I will only stir fry the chicken by itself. I didn't do the whole dry red peppers, instead I used julienned carrots and red, yellow and orange bell peppers. I did add several sprinkles of red cayenne for heat. It was great and easy! Will be doing again!!! 6/9/2012
