I live outside a small town in Texas on 18 acres.  I like living in the country, camping, the beach, cooking, computer games, reading, fishing, gardening, and spending time with my family. I have two grown sons and a little grandson.
  Mexican food is my favorite.

Pina Colada Cake

Pina Colada Cake

Cream of coconut - it's a milky, creamy liquid coconut juice. It's an ingredient normally used in mixed drinks and it comes in a can; I usually find it by the wine and mixers for alcoholic drinks. — Beachbumette 3/12/2014
Easy Beef-Vegetable Soup

Easy Beef-Vegetable Soup

This is easy and delicious.....my favorite kind of recipe after a hard day's work! I added a little chopped onion that I cooked with the meat; a little salt and black pepper while the soup was simmering. Then I added cooked cellentani pasta and grated parmesan cheese before serving. Five stars! Thanks for sharing. — CookingPassion 12/17/2013
Bloody Mary Chili

Bloody Mary Chili

This looks and sounds delicious, but I wondered about the lack of spices like chili powder and cumin. — durg78 12/5/2013
Crock Pot Beef and Broccoli

Crock Pot Beef and Broccoli

I used the lower sodium beef broth and lower sodium soy sauce. I added bell pepper strips and strips of onion with the broccoli and it still could have used more vegetables. I also added some crushed red pepper. This is a good base recipe to experiment with. Note - this would have been way too salty for us if I hadn't used the reduced sodium ingredients. — terrialexander 8/5/2013

Super Easy Beef Enchiladas

Super Easy Beef Enchiladas

These are really, really good. I wish I'd known to use a larger can of tomato sauce. The 8 ounce can is not enough. They were a little dry, but it's a keeper! Also the taco seasoning recipe is wonderful. Thanks for sharing. — minic00 7/9/2013

Corn On The Cob On The Bbq

This is an awesome recipe! My husband made it along with steaks for Mother's Day. I wouldn't change a single thing! 5/13/2013
Ricotta Stuffed Shells

Ricotta Stuffed Shells

These are great! I added 1/2 Tbsp. of Oregano to the cheese stuffing mixture and sprinkled the stuffed shells with crushed red pepper after removing the dish from the oven. I also used a spicy, chunky sauce. So easy and versatile. We'll be having this often and experimenting by adding meat, etc. Thanks for sharing! — vtkrose 4/22/2013

This looks great. Does anyone know where to find the sticks? — ladybugplus 4/9/2013
Oreo Dessert

Oreo Dessert

This is easy and it's pretty good. It makes a pretty dessert. I can't help but wonder if it would be better with some other flavor of pudding. There's a little too much chocolate or something. If I make this again I will try French vanilla or banana pudding in place of the chocolate or swap the Oreos for some vanilla sandwich cookies. It would be a fun one to experiment with. — SonjaC 3/26/2013
Extraordinary Stuffed Peppers

Extraordinary Stuffed Peppers

This was an awesome dish, although I changed it up a lot and will probably post my version (with reference to your original). I wanted to make these similar to the stuffed bell peppers I make using your spice combinations (with the exception of the cinnamon). I mixed the ground beef, one raw egg, a can of Ro-tel tomatoes and some minute rice in a bowl like I was making a meatloaf. I then added the spices, omitting the cinnamon and spinach, and added a few dashes of Worcestershire, mixed again and stuffed the peppers with the raw meat mixture. I baked them for an hour before adding the cheese to make sure the meat was thoroughly cooked. The mildness of the poblano pepper combined with the creaminess of the oaxaca cheese and slight spiciness of the meat filling was wonderful. — TheKitchenWitch 3/19/2013

These were easy and excellent! We did not have the sticks so we just cut the wieners in half and dropped them in the oil. 1/27/2013

Extra-Easy Lasagna

Extra-Easy Lasagna

While I loved the simplicity of this dish and the idea of using the uncooked noodles, I did think it lacked flavor. I think some seasoning added to the sauce, such as sugar, oregano, crushed red pepper, etc. would liven up the jarred sauce. I would also add some parsley, salt and pepper to the cheese mixture. I may try it again and 'dress it up a little'. :) 12/6/2012

Barbara, I so sorry that for 2 months I have not noticed the question you posted on my comment wall about butter rolls. The quick answer is yes, I know what they are, I have several recipes, a recipe from my maternal grandmother which I don't care for (too soggy, doughy and syrupy), a recipe from one of my paternal (Polish) aunts that's quite good, and several others that we've tried over the years and have worked for us. I will be happy to share them with you as soon as I can but they are on a rolodex program on my home computer in Indiana. I'm still visiting my father at his home in Okeechobee Florida but will be returning to Indiana soon. Take care and God bless.

I'd love to try that, but our oven is about the size of a microwave (full sized ovens are a luxury here). I'll have to see about finding a slab of meat that'll fit, though, 'cause that recipe looks delicious :)
