European Street Style Beer Cheese Soup

I use Newcastle and JW Dundees Honey Brown Lager for the brew mix (nice dark and rich with right amount of broth). Also, tried couple of new cheeses (1 cup ea of cracker barrell brand extra sharp and Wisconsin white cheddar cheeses, 1 cup of M. Jack and 2 cups of pepper jack) and they were by far the best scald I've gotten on this easy, comforting, and outstanding recipe. Also, the popcorn absolutely makes the dish for me. I like it spicy and the plain white micro pop kernals provide a great flame retardant for those who don't want the heat associated with my kitchen on this long time favorite. Mustard Greens

I made this tonight from fresh mustard leaves from my garden and added minced garlic and green onions after the bacon. Just make sure you have enough ruffage to supplement the bacon grease as it can get it little thick. Overall, great, quick, and straightforward. Saving this for next weeks fix again! 6/10/2010
