What's for dinner?

I live on a small island off the coast of BC inhabited by 2 humans, our dog, the odd critter who swims over (like the deer who keep trying to eat my herbs), some eagles who have a nest here and the Mugwump who keeps breaking into the compost bin.

We own a woodworking company and we also build wood epoxy boats and I am studying naval architecture.  So we spend a lot of time in boats or, when mine isn't broken, on our dirt bikes.  And I am an absolute movie geek and a book worm to boot.

I am supposed to maintain a wheat and gluten free diet with a low dairy consuption, so I find myself adapting a lot of dishes.  I don't always manage to avoid the dairy but can usually avoid the gluten.  Thai food has become my cooking refuge but I love it all. 

If it's food and it's home-made and as much as possible, locally sourced, I am all in.

These were fantastic. I don't have garlic salt so I just used garlic instead, I also don't own a food processor so I grated the onion finely and chopped the cooked chicken. But best of all these are super easy to make gluten free by using brown rice tortillas in lieu of flour. Make sure you heat them before attempting to roll them or they crack. Served with mexican rice and black beans they were a hit!!!

The biggest key to nice rolls is not to let the filling mixture be too wet and not to make the rolls too big. The first time you make these will take a bit longer as you figure out your own method but it is worth it. [I posted this recipe.]
